Turkey Meatloaf

Ingredients
- Servings: 6
- 2 lbs ground turkey (85/15)
- 1 (14 1/2 ounce) can tomato sauce
- 2 -2 1/2 cups crushed saltine crackers
- 2 -3 roasted red peppers
- 1 tablespoon garlic powder
- 1 tablespoon onion powder (or flakes)
- 1 tablespoon parsley
- 2 cups ketchup
Recipe
- 1 pre-heat oven to 350 degrees.
- 2 dice roasted red bell peppers. you can use a jar of marinated red bell peppers.
- 3 combine all ingredients except ketchup.
- 4 mold mixture into loaf form.
- 5 cover meatloaf mixture with ketchup (add as much as desired).
- 6 bake meatloaf for 1 hour or until turkey is cooked through.
- 7 additional ketchup may be added after meatloaf is done baking.
