Sweet Lamb

Ingredients

  • Servings: 4
  • 1 1/2 kg lamb, round
  • 2 onions
  • 1 tablespoon nuoc nam, plus
  • 4 tablespoons nuoc nam
  • 4 tablespoons soy sauce
  • 2 tablespoons whiskey
  • 8 tablespoons sugar (to make liquid caramel)
  • 2 small chili peppers
  • 1 bunch chives

Recipe

  • 1 remove the skin and fat from the lamb (the dish will taste better), cut the lamb into cubes.
  • 2 boil water in a pot and add one tablespoonful of nuoc-mam. add the lamb. cook for 30 to 45 minutes. drain the lamb.
  • 3 thinly slice the onions and brown in a pan with the lamb, nuoc-mam, soy sauce and whiskey.
  • 4 make caramel (cover 8 tablespoons or more of sugar with water and bring to the boil. as soon as the sugar begins to brown add a little water).
  • 5 pour the caramel over the lamb and stir.
  • 6 sprinkle chopped chives and chili peppers over the dish and serve hot.
