Sweet Potato And Canadian Bacon Hash

Ingredients

  • Servings: 6
  • 4 cups diced peeled sweet potatoes (about 1 pound)
  • 2 cups diced red potatoes (about 8 ounces)
  • 2 tablespoons vegetable oil
  • 1 cup diced canadian bacon (about 8 ounces)
  • 1 cup chopped green bell pepper
  • 2/3 cup chopped green onion
  • 3/4 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon fresh ground black pepper
  • 1/8 teaspoon grated whole nutmeg
  • 1/4 cup reduced-sodium fat-free chicken broth
  • 1 tablespoon cider vinegar

Recipe

  • 1 place potatoes in a saucepan, and cover with water. bring to a boil. reduce heat, and simmer 5 minutes. drain.
  • 2 heat oil in a large nonstick skillet over medium heat. add bacon; cook 4 minutes, stirring frequently.
  • 3 add bell pepper and green onions; cook 2 minutes, stirring frequently.
  • 4 add potatoes, salt, celery seed, pepper, and nutmeg; cook 4 minutes, gently stirring occasionally.
  • 5 stir in broth and vinegar. toss gently until liquid is absorbed.
