Ingredients

- 4 cups diced peeled sweet potatoes (about 1 pound)
- 2 cups diced red potatoes (about 8 ounces)
- 2 tablespoons vegetable oil
- 1 cup diced canadian bacon (about 8 ounces)
- 1 cup chopped green bell pepper
- 2/3 cup chopped green onion
- 3/4 teaspoon salt
- 1/2 teaspoon celery seed
- 1/2 teaspoon fresh ground black pepper
- 1/8 teaspoon grated whole nutmeg
- 1/4 cup reduced-sodium fat-free chicken broth
- 1 tablespoon cider vinegar
Recipe
- 1 place potatoes in a saucepan, and cover with water. bring to a boil. reduce heat, and simmer 5 minutes. drain.
- 2 heat oil in a large nonstick skillet over medium heat. add bacon; cook 4 minutes, stirring frequently.
- 3 add bell pepper and green onions; cook 2 minutes, stirring frequently.
- 4 add potatoes, salt, celery seed, pepper, and nutmeg; cook 4 minutes, gently stirring occasionally.
- 5 stir in broth and vinegar. toss gently until liquid is absorbed.
