vegetarian taco chili

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 package mexican vegetarian ground meat substitute (or other soy "ground beef" product that would equal 1.5 lbs ground beef)
  • 1 1/2 cups water
  • 1 cup frozen corn kernels
  • 2 (14 ounce) cans diced tomatoes
  • 2 (14 ounce) cans kidney beans, drained and rinsed.
  • 1 package reduced-sodium taco seasoning mix
  • 1 (14 ounce) can baked beans in tomato sauce

Recipe

  • 1 empty package of veggie ground round into a large pot over medium heat.
  • 2 use a spoon to seperate into pieces.
  • 3 add the remaining ingredients to pot.
  • 4 stir well to mix.
  • 5 bring to almost boiling, reduce heat and simmer, stirring occasionally, for 20-30 min.
  • 6 serve topped with sour cream if desired.
