Yorkshire Chicken

Total Time: 31 mins Preparation Time: 30 mins Cook Time: 1 min

Ingredients

  • 1 (3 -3 1/2 lb) frying chicken
  • 1 1/3 cups all-purpose flour, divided
  • 2 teaspoons salt, divided
  • 1 teaspoon poultry seasoning
  • 1/4 teaspoon pepper
  • 1/2 teaspoon baking powder
  • 3 eggs
  • 1 1/2 cups milk

Recipe

  • 1 mix 1/3 cup flour, 1 tsp salt, the poultry seasoning and pepper.
  • 2 coat chicken pieces with the mixture.
  • 3 brown all sides in 1/4 cup butter in large skillet.
  • 4 arrange chicken in a 13-by-9 inch baking pan.
  • 5 bake at 350°f for 30 minutes.
  • 6 remove chicken.
  • 7 if desired, make gravy in pan, using drippings.
  • 8 pour off into saucepan and keep warm.
  • 9 put chicken back in pan.
  • 10 in electric mixer, beat together remaining flour, salt, baking powder, eggs and milk.
  • 11 add remaining butter, melted.
  • 12 beat until smooth.
  • 13 pour over chicken.
  • 14 bake at 350°f for another 45 minutes.
  • 15 serve with gravy, if used.
