Wild Chili

Ingredients
- 3 lbs roast (i've used everything under the sun including game)
- 1 large onion
- 2 bell peppers
- 3 garlic cloves
- 3 hot red peppers
- 1 (28 ounce) can of pre cut tomatoes
- 2 (15 ounce) cans tomato sauce
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 3 teaspoons chili powder
- 1 teaspoon oregano
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 30 ounces kidney beans (drained don't rinse)
- 1 tablespoon worcestershire sauce
- 2 cups water
- cheddar cheese
- sour cream
Recipe
- 1 cube roast into small pieces, place in a bowl and add powdered garlic and onion powder.
- 2 chop onions and peppers.
- 3 chop hot peppers and set aside.
- 4 add meat to a hot skillet and saute until almost done, add onion and bell peppers. let cook until onions start to appear translucent.
- 5 in a large pot, add remaining ingredients and bring to a boil.
- 6 reduce heat and add meat, onions and bell peppers.
- 7 bring chili to a rolling boil uncovered until the desired consistency is reached. cover and let simmer for 3-4 hours stirring occasionally.
- 8 use cheese and sour cream as desired to garnish when serving.
