Wild Chili

Total Time: 4 hrs 30 mins Preparation Time: 30 mins Cook Time: 4 hrs

Ingredients

  • 3 lbs roast (i've used everything under the sun including game)
  • 1 large onion
  • 2 bell peppers
  • 3 garlic cloves
  • 3 hot red peppers
  • 1 (28 ounce) can of pre cut tomatoes
  • 2 (15 ounce) cans tomato sauce
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 3 teaspoons chili powder
  • 1 teaspoon oregano
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 30 ounces kidney beans (drained don't rinse)
  • 1 tablespoon worcestershire sauce
  • 2 cups water
  • cheddar cheese
  • sour cream

Recipe

  • 1 cube roast into small pieces, place in a bowl and add powdered garlic and onion powder.
  • 2 chop onions and peppers.
  • 3 chop hot peppers and set aside.
  • 4 add meat to a hot skillet and saute until almost done, add onion and bell peppers. let cook until onions start to appear translucent.
  • 5 in a large pot, add remaining ingredients and bring to a boil.
  • 6 reduce heat and add meat, onions and bell peppers.
  • 7 bring chili to a rolling boil uncovered until the desired consistency is reached. cover and let simmer for 3-4 hours stirring occasionally.
  • 8 use cheese and sour cream as desired to garnish when serving.
