- 1 (4 lb) boneless center cut lamb loin roast
- 1 tablespoon minced garlic (dry granulated)
- 2 teaspoons paprika
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons fresh ground pepper
- 1 teaspoon oregano
- 3/4 teaspoon ground red pepper
Recipe
- 1 in small bowl combine seasonings. rub over lamb. cover with plastic wrap and refrigerate overnight.
- 2 preheat oven to 425 degrees. unwrap lamb; place on rack in a roasting pan and place in oven; immediately reduce oven to 325 degrees.
- 3 roast 2 hours and 15 minutes or until meat thermometer reaches 155 to 160 degees. let stand 10 minutes (can be held at room temperature 1 hour).
