Spicy Lamb Loin

Total Time: 2 hrs 5 mins Preparation Time: 5 mins Cook Time: 2 hrs

Ingredients

  • Servings: 10
  • 1 (4 lb) boneless center cut lamb loin roast
  • 1 tablespoon minced garlic (dry granulated)
  • 2 teaspoons paprika
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons fresh ground pepper
  • 1 teaspoon oregano
  • 3/4 teaspoon ground red pepper

Recipe

  • 1 in small bowl combine seasonings. rub over lamb. cover with plastic wrap and refrigerate overnight.
  • 2 preheat oven to 425 degrees. unwrap lamb; place on rack in a roasting pan and place in oven; immediately reduce oven to 325 degrees.
  • 3 roast 2 hours and 15 minutes or until meat thermometer reaches 155 to 160 degees. let stand 10 minutes (can be held at room temperature 1 hour).
