Teriyaki Lamb Tenderloin

Ingredients

- 1/4 cup low sodium soy sauce
- 2 tablespoons firmly packed dark brown sugar
- 2 tablespoons dry sherry
- 2 tablespoons rice vinegar
- 2 garlic cloves, minced
- 1 teaspoon finely grated fresh ginger
- 1/4 teaspoon red pepper flakes
- 1 1/4 lbs lamb tenderloin, trimmed of all visible fat and silverskin
Recipe
- 1 the sauce: combine all sauce ingredients in a small bowl, stirring until the sugar dissolves.
- 2 put the teriyaki sauce and lamb in a sealable plastic bag.
- 3 seal the bag and marinate the lamb in the refrigerator, turning once, for at least 30 minutes to 4 hours.
- 4 preheat the broiler.
- 5 remove the lamb from the marinade and discard the marinade.
- 6 place the lamb on a roasting pan and broil until an instant-read meat thermometer inserted into the thickest part reads 155°, about 15 minutes, turning once.
- 7 let rest for 10 minutes before slicing.
