Ingredients

- 2 lamb tenderloin (3/4 lb)
- 1/2 cup low sodium soy sauce
- 1/4 cup unsweetened orange juice
- 1/4 cup unsweetened pineapple juice
- 2 tablespoons brown sugar
- 1 tablespoon fresh ginger (peeled, grated)
- 2 garlic cloves (minced)
Recipe
- 1 place lamb in a large heavy-duty, ziplock baggie.
- 2 combine soy sauce and next 5 ingreds.pour over lamb. seal bag; marinate in fridge for 8 hours or overnight, turning bag occasionally.
- 3 remove lamb from marinade, discarding marinade.
- 4 coat grill rack with cooking spray; place on grill over medium-hot coals (350 to 400º) place lamb on rack; grill, covered, 25-30 mins.or until meat thermometer inserted in thickest portion of lamb registers 160º, turning occasionally.
