Weight Watchers Grilled Lamb Teriyaki (4 Points Per Serving)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 lamb tenderloin (3/4 lb)
  • 1/2 cup low sodium soy sauce
  • 1/4 cup unsweetened orange juice
  • 1/4 cup unsweetened pineapple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh ginger (peeled, grated)
  • 2 garlic cloves (minced)

Recipe

  • 1 place lamb in a large heavy-duty, ziplock baggie.
  • 2 combine soy sauce and next 5 ingreds.pour over lamb. seal bag; marinate in fridge for 8 hours or overnight, turning bag occasionally.
  • 3 remove lamb from marinade, discarding marinade.
  • 4 coat grill rack with cooking spray; place on grill over medium-hot coals (350 to 400º) place lamb on rack; grill, covered, 25-30 mins.or until meat thermometer inserted in thickest portion of lamb registers 160º, turning occasionally.
