Winter Warm-up Beef Simmer

Total Time: 4 hrs 30 mins Preparation Time: 30 mins Cook Time: 4 hrs

Ingredients

  • Servings: 8
  • 1 cup onion, chopped
  • 6 bacon, slices cut into 1/2-inch pieces
  • 3 lbs beef chunk roast, trimmed cut into 2 1/2-inch in pieces
  • 8 medium red potatoes, halved
  • 3 medium carrots, cut into 1-inch pieces
  • 3 medium onions, halved
  • 8 ounces fresh mushrooms, halved
  • 1/2 cup fresh parsley, chopped
  • 1 cup apple juice
  • 10 1/2 ounces beef broth
  • 6 ounces tomato paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme leaves
  • 1 teaspoon fresh garlic, minced
  • 2 bay leaves

Recipe

  • 1 heat oven to 325*f.
  • 2 in dutch oven place onions, bacon and roast. cook over med-high heat, stirring occasionally until bacon and roast are browned.
  • 3 stir in vegetables.
  • 4 stir in remaining ingredients, cover, bake for 1 1/2 hours.
  • 5 uncover continue baking, stirring occasionally for 2 to 2 1/2 hours or until roast is fork tender.
