Winter Warm-up Beef Simmer

Ingredients

- 1 cup onion, chopped
- 6 bacon, slices cut into 1/2-inch pieces
- 3 lbs beef chunk roast, trimmed cut into 2 1/2-inch in pieces
- 8 medium red potatoes, halved
- 3 medium carrots, cut into 1-inch pieces
- 3 medium onions, halved
- 8 ounces fresh mushrooms, halved
- 1/2 cup fresh parsley, chopped
- 1 cup apple juice
- 10 1/2 ounces beef broth
- 6 ounces tomato paste
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme leaves
- 1 teaspoon fresh garlic, minced
- 2 bay leaves
Recipe
- 1 heat oven to 325*f.
- 2 in dutch oven place onions, bacon and roast. cook over med-high heat, stirring occasionally until bacon and roast are browned.
- 3 stir in vegetables.
- 4 stir in remaining ingredients, cover, bake for 1 1/2 hours.
- 5 uncover continue baking, stirring occasionally for 2 to 2 1/2 hours or until roast is fork tender.
