Tangy Turkey Burritos

Ingredients
- 1 1/4 lbs ground turkey (cheaper than ground turkey breast)
- 14 ounces of goya frozen sofrito sauce, thawed (find in the ethnic section of your grocers freezer)
- 1 green bell pepper
- 1 cup corn (frozen is fine)
- 1 small onion, chopped
- 1/2 cup shredded cheddar cheese or 1/2 cup manchego cheese
- 10 medium flour tortillas
- tomato, and shredded lettuce as a topper
- sour cream
Recipe
- 1 1) chop the onion and bell pepper, discarding all waste.
- 2 2) pour some thawed sofrito sauce into a deep pan with the vegetables until the onion is translucent and the bell pepper loses a bit of its crunch.
- 3 3) add 1 package of ground turkey and 2/3 of the remaining sauce. cook until the meat is cooked all the way thru.
- 4 4) add the frozen corn and the remainder of the sauce, allowing the corn to heat through.
- 5 5) place 4 flour tortillas in the microwave with a damp paper towel covering them, microwave for 15-20 secs.
- 6 6) assemble the tortillas into burritos serving with diced tomato and lettuce, and a dollop of sour cream.
- 7 serve with a side of rice or pico de gallo.
