Yorkshire Beef Pudding

Ingredients

- 1 small onion, sliced thin
- 1 lb ground beef
- 2 tablespoons flour
- 1 (16 ounce) can mixed vegetables
- 1/3 cup water
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons butter
- 2 eggs
- 1 cup milk
- 1 cup flour
- 1/2 teaspoon salt
Recipe
- 1 brown meat with onion.
- 2 drain grease, except 1 tablespoon.
- 3 add 2 tablespoon flour, stir in well.
- 4 add liquid.
- 5 cook until thick.
- 6 add vegetables, salt and pepper.
- 7 (sometimes i stop here and serve.) melt butter in 2 quart casserole.
- 8 beat eggs in medium bowl.
- 9 add milk, blend well.
- 10 add flour and salt, beat until batter is smooth.
- 11 pour into dish.
- 12 spoon meat mixture into center of batter to within 1 inch of edge.
- 13 bake in 425 degree oven for 30 minutes or until puffed and browned.
