Weight Watchers Crockpot Tuscan Turkey Pasta

Total Time: 4 hrs 20 mins Preparation Time: 20 mins Cook Time: 4 hrs

Ingredients

  • Servings: 8
  • 1 lb turkey breast, boneless, skinless cut into 1-inch pieces
  • 16 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned tomato sauce
  • 29 ounces canned stewed tomatoes, italian-style
  • 4 ounces mushrooms, canned drained and sliced
  • 1 medium green pepper, chopped
  • 1 small onion, chopped
  • 2 celery ribs, chopped
  • 3 cloves, garlic, chopped
  • 1 cup water (may need to add more before adding pasta)
  • 1 tablespoon italian seasoning
  • 6 ounces whole-wheat spaghetti, uncooked, broken

Recipe

  • 1 place all ingredients, except spaghetti, in a slow cooker. cover and cook on low heat for 4 hours or until vegetables are tender.
  • 2 turn setting to high heat, stir in spaghetti and cover. stir again after 10 minutes, cover and cook until pasta is tender, about 20 minutes more. yields about 1 1/2 cups per serving.
