Tater Salad

Ingredients

- 4 cups cubed cooked potatoes
- 10 slices bacon
- 1/2 cup sliced green onion
- 1/2 cup finely chopped onion
- 1/2 cup diced green bell pepper
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon kosher salt
- 1/8 teaspoon pepper, freshly ground
Recipe
- 1 cut the bacon in fine strips and heat in pan, until crisp.
- 2 drain the fat and let cool on paper towels.
- 3 mix mayo, vinegar, salt, pepper, onions, green onions, bell pepper and bacon and let sit for 1 hour in the fridge.
- 4 add the potato cubes and mix everything well.
- 5 let sit in fridge for 1 hour or more, at least until well chilled.
