Tater Salad

Total Time: 2 hrs 25 mins Preparation Time: 25 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 4 cups cubed cooked potatoes
  • 10 slices bacon
  • 1/2 cup sliced green onion
  • 1/2 cup finely chopped onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon pepper, freshly ground

Recipe

  • 1 cut the bacon in fine strips and heat in pan, until crisp.
  • 2 drain the fat and let cool on paper towels.
  • 3 mix mayo, vinegar, salt, pepper, onions, green onions, bell pepper and bacon and let sit for 1 hour in the fridge.
  • 4 add the potato cubes and mix everything well.
  • 5 let sit in fridge for 1 hour or more, at least until well chilled.
