Weight Watchers Moo Shu Lettuce Wraps With A Kick

Ingredients
- 1 lb lean ground beef, 95% fat-free
- 1 1/2 shallots, diced
- 2 tablespoons ginger, minced
- 2 garlic cloves, minced (2 tsp)
- 2 cups bok choy, thinly sliced
- 1 sweet red pepper, thinly sliced
- 1 serrano chili, seeded and finely chopped
- 2 tablespoons low sodium soy sauce
- 8 leaves lettuce
- 1/4 cup light soy sauce
- 4 teaspoons fish sauce
- 4 teaspoons sugar
Recipe
- 1 in a small bowl, combine soy sauce, fish sauce and sugar untill sugar dissolves. set aside.
- 2 heat a large skillet or wok over high until hot. add oil and swirl to coat. most important to do this step to prevent sticking.
- 3 add shallot, ginger, garlic, chile, pepper, and bok choy. stir until fragrant, about 1 or 2 minute.
- 4 add meat and cook with a wooden spoon, breaking up meat until almost cook thru, about 5 minute.
- 5 add half the sauce and stir until meat is done, about 2 minute.
- 6 serve in lettuce leaves with remaing sauce.
