Weight Watchers Moo Shu Lettuce Wraps With A Kick

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 lb lean ground beef, 95% fat-free
  • 1 1/2 shallots, diced
  • 2 tablespoons ginger, minced
  • 2 garlic cloves, minced (2 tsp)
  • 2 cups bok choy, thinly sliced
  • 1 sweet red pepper, thinly sliced
  • 1 serrano chili, seeded and finely chopped
  • 2 tablespoons low sodium soy sauce
  • 8 leaves lettuce
  • 1/4 cup light soy sauce
  • 4 teaspoons fish sauce
  • 4 teaspoons sugar

Recipe

  • 1 in a small bowl, combine soy sauce, fish sauce and sugar untill sugar dissolves. set aside.
  • 2 heat a large skillet or wok over high until hot. add oil and swirl to coat. most important to do this step to prevent sticking.
  • 3 add shallot, ginger, garlic, chile, pepper, and bok choy. stir until fragrant, about 1 or 2 minute.
  • 4 add meat and cook with a wooden spoon, breaking up meat until almost cook thru, about 5 minute.
  • 5 add half the sauce and stir until meat is done, about 2 minute.
  • 6 serve in lettuce leaves with remaing sauce.
