Turkey Stuffed Peppers

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 lb lean ground turkey
  • 4 green peppers
  • 1 tablespoon olive oil
  • 1/2 cup red onion
  • 4 button mushrooms (sliced)
  • 2 ounces frozen spinach (thawd)
  • 2 garlic cloves
  • 1/2 tablespoon sage
  • 1 teaspoon basil
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon season salt
  • 1/2 teaspoon black pepper
  • 1 cup 2% cheddar cheese

Recipe

  • 1 remove the tops from the peppers, seed and remove membrane.
  • 2 steam in a microwave save container. do this by putting one tbs. water in the bottom of the container, and cover with plastic wrap. cook until tender, approximately 3 minutes on high.
  • 3 brown the turkey in 1/2 the olive oil until almost cooked through.
  • 4 saute the onion, mushrooms and garlic in the olive oil on medium high heat.
  • 5 add the thawd spinach and seasonings after the onions and turkey are browned and nicely caramelized. cook the complete mixture until heated through.
  • 6 divid the mixture among the 4 peppers. this is depend upon how big your green peppers are.
  • 7 top with 1/4 cheese and broil in the oven until the cheese is browned. about 2 minutes, but be careful not to burn!
