Yoof's Oriental Chicken Salad

Total Time: 34 mins Preparation Time: 30 mins Cook Time: 4 mins

Ingredients

  • Servings: 4
  • 1 roasted deli chicken (2-3 lbs)
  • 2 -3 green onions with tops
  • 1 (7 ounce) can water chestnuts, sliced
  • 2 tablespoons sesame seeds
  • 1 (5 ounce) jar pimientos or 1 (5 ounce) jar roasted red peppers
  • 3 -4 tablespoons mayonnaise (or to taste)
  • 1 teaspoon lemon thyme leaves, fresh
  • 1 (15 ounce) can chow mein noodles

Recipe

  • 1 remove chicken meat from the carcass, cutting into bite size pieces and place into a large bowl.
  • 2 toast the sesame seeds in a dry, non-stick frying pan, stirring or shaking pan continuously to keep seeds moving. remove pan from heat when their color begins to change to golden(they will continue to cook in the pan).
  • 3 drain water chestnuts and slice into sticks(if not already cubed)put into bowl with chicken.
  • 4 drain jar of pimentos or roasted peppers and slice into small pieces, put into bowl with chicken and water chestnuts.
  • 5 wash and slice entire length of green onions. dice the ends fine and cut the greens into 1/4 inch widths. add to bowl with other ingredients.
  • 6 add toasted sesame seeds to bowl with other ingredients.
  • 7 add salt and pepper to taste and lemon thyme (if desired).
  • 8 add enough mayonnaise to hold it together or to your liking.
  • 9 serve garnished with or on top of canned chow mein noodles.

Ingredients

  • Servings: 2
  • 20 ounces bone-in rib eye
  • fresh cracked pepper (to taste but don't be too shy)
  • 6 tablespoons extra virgin olive oil, divided
  • 3 garlic cloves
  • 1 sprig rosemary
  • 1 sprig thyme
  • salt
  • 1 tablespoon butter

Recipe

  • 1 rub both sides of steak with 1 tbsp of the oil.
  • 2 season the steak with pepper on both sides.
  • 3 heat grill (indoor type - or a large skillet will also work) with medium high heat until very hot.
  • 4 add 2 tbsp to the grill or pan and place the steak in the pan, allow it to cook on one side for 2-3 min without moving or poking the meat.
  • 5 while the steak is cooking, chop the garlic and put it in the remaining evoo.
  • 6 take the sprigs of rosemary and thyme, wrap the ends with aluminum foil to keep them together and use them as a brush to brush the garlic oil on the steak while it is cooking.
  • 7 flip the steak over, brush with garlic oil, then salt the cooked side.
  • 8 after 2-3 min flip the steak over again, and salt that side as well, brushing all sides with the herb brush of garlic oil.
  • 9 lower the heat.
  • 10 add the butter to the top of the steak, and let it melt as the steak cooks to your preference. cooking time will depend on how well done you wish your steak to be.
  • 11 when the steak is cooked, remove from pan to a board or plate and allow the steak to rest for approximately 5 minute
  • 12 slice and serve.

Vegetarian Egg-drop Soup

Ingredients

  • 2 tablespoons red miso
  • 2 cups teriyaki sauce
  • 4 eggs
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 quart mushroom
  • 10 cups water
  • sea salt

Recipe

  • 1 using a cast iron frying pan heat up the butter and miso until melted. add some teryiaki sauce. when hot add mushrooms and fry them until golden brown. the miso will stick to the mushrooms and give them a meaty taste.
  • 2 in a separate pot add water and bring to a boil. once the mushrooms are brown dump the butter and mushrooms into the pot. bring water to boil.
  • 3 while water is coming to a boil, crack the eggs and place them in a bowl. gently whisk them so that there are no bubbles.
  • 4 when water is boiling slowly add the eggs to the water. heat until they are cooked. literally drop the eggs into the boiling soup. the slower you go the more wispy it comes out.
  • 5 serve in simple bowl.

Two-at-once Roasted Turkey Breasts

  • 1 tablespoon flour
  • 2 medium onions
  • 4 stalks celery
  • 2 turkey breast
  • oil

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 shake flour into a turkey size reynolds oven bag, place in a roasting pan atleast 2 inches deep.
  • 3 cut onions into eighths and slice celery. add to oven bag. brush turkey with oil. place turkey breasts in bag on top of vegetables.
  • 4 close oven bag with nylon tie; cut six 1/2 inch slits in top.
  • 5 bake 1 1/2 to 2 1/4 hours or until meat thermometer reads 170 degrees.

Two For One Meatloaf

Ingredients

  • 2 lbs ground chuck
  • 1 lb ground lamb
  • 1 medium onion, chopped
  • 1 small green pepper, chopped
  • 1 (28 ounce) can tomatoes, drained and coarsely chopped
  • 1 cup yellow cornmeal
  • 2 large eggs
  • 1 (16 ounce) can creamed corn
  • 1 tablespoon dried sage, crumbled
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon salt, to taste

Recipe

  • 1 combine all ingredients in a large bowl.
  • 2 divide mixture into two 9 x 5 x 3 loaf pans.
  • 3 bake in middle of oven for 1 hour 15 minutes@ 350 f or until meat thermometer reads 160°f.
  • 4 cool for 20 minutes before removing from pans.

Yogurt-mint Marinated Chicken

Ingredients

  • Servings: 5
  • 5 bone-in skinless chicken breast halves
  • 1 teaspoon coarse salt
  • 1 tablespoon fresh lemon juice
  • 1 cup plain low-fat yogurt
  • 1/2 cup chopped fresh mint
  • 1 tablespoon minced fresh ginger
  • 3 garlic cloves, minced
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder

Recipe

  • 1 rinse chicken under cold water. place in a large bowl and rub with salt and lemon juice. set aside.
  • 2 blend remaining ingredients; toss well to mix and then coat chicken.
  • 3 seal bowl with plastic wrap and refrigerate for 24 hours.
  • 4 preheat oven to 400* f.
  • 5 place chicken on a foil-lined baking sheet and bake for 35 minutes.

Yogurt-braised Chicken With Cashews And Raisins

  • Servings: 6
  • 3 lbs broiler-fryer chickens (8 pieces)
  • 1 1/2 tablespoons kosher salt
  • 4 teaspoons ground cumin, divided
  • 1 1/2 teaspoons ground cardamom, divided
  • 1 teaspoon cayenne pepper
  • 2 1/2 cups raisins (about 12 ounces)
  • 1 1/2 cups water
  • 4 cups plain yogurt
  • 2 teaspoons fresh ground black pepper
  • 2 teaspoons ground cinnamon
  • 5 tablespoons clarified butter
  • 1 cup raw cashews (about 5 ounces)
  • 10 whole cloves
  • 1/3-1/2 cup fresh lemon juice

Recipe

  • 1 place chicken, skin side up, on rimmed baking sheet. mix 1 1/2 tablespoons salt, 3 teaspoons cumin, 1 teaspoon cardamom and cayenne in small bowl. sprinkle chicken generously on all sides with spice mix. let stand 2 hours.
  • 2 combine 1 cup raisins and 1 1/2 cups hot water in medium bowl. cover; soak until raisins are soft, at least 30 minutes and up to 1 hour. drain, reserving soaking liquid. blend raisins and 3 tablespoons reserved soaking liquid in mini processor, adding more soaking liquid, if needed, to make smooth paste.
  • 3 place yogurt in medium bowl; whisk 1 minute to lighten. add black pepper, cinnamon, remaining 2 teaspoons salt, 1 teaspoon cumin and 1/2 teaspoon cardamom and whisk to blend.
  • 4 heat butter in large nonstick skillet over high heat. add chicken, skin side down, and saute until brown, about 6 minutes per side. add remaining 1 1/2 cups raisins, cashews and cloves. slowly stir in yogurt mixture. reduce heat, cover, and simmer until chicken is cooked through, about 12 minutes.
  • 5 transfer chicken to platter. whisk raisin paste and 1/3 cup lemon juice into sauce. simmer to blend, whisking constantly, about 4 minutes. season with salt, pepper, and more lemon juice, if desired. spoon over chicken.
