Yakitori (skewered Japanese Chicken)

Total Time: 35 mins Preparation Time: 25 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 2 lbs chicken thighs, cut into 1 to 1-1/2-inch pieces (boneless or skinless)
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoons kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/2 cup low sodium chicken broth
  • 3 tablespoons soy sauce
  • 3 tablespoons mirin (sweet rice wine)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon golden brown sugar
  • 1/4 teaspoon fresh ground black pepper

Recipe

  • 1 fill a chimney starter to the rim with charcoal and burn the charcoal until it is lightly covered with ash. spread the charcoal in a tightly packed, single layer across one-half of the charcoal grate. put the cooking grate in place, close the lid, and let the charcoal burn down to high heat (450° to 550°f). leave all the vents open. if you are using a gas grill, preheat your grill on high until it reaches 500°f.
  • 2 in a medium bowl combine the chicken pieces with the oil, salt, and pepper and mix well. thread the chicken pieces through their centers on the top half of the skewers. the chicken pieces should touch, but do not cram them together. refrigerate until ready to grill, or as long as 2 hours.
  • 3 in a small saucepan mix the sauce ingredients. bring to a boil over medium-high heat and cook until the liquid is reduced to ½ to ¾ cup, about 5 minutes, stirring once or twice. remove the saucepan from the heat.
  • 4 brush the cooking grates clean. place a strip of aluminum foil on the cooking grate over the empty section of the charcoal grate or over an unlit burner. grill the skewers over direct high heat, with the bare wooden section of the skewers placed over the foil. close the lid and cook until the meat is lightly charred on the surface, 4 to 5 minutes, turning once and swapping their positions as needed for even cooking. open the lid and begin turning and basting the chicken with the sauce (you may not need all of the sauce) until fully cooked, 3 to 5 minutes longer. remove from the grill and serve warm.

Sweet And Pungent Lamb

Ingredients

  • 2 lbs lean lamb, cut into 1/2-inch cubes
  • 1/4 cup oil
  • 1 cup chicken broth
  • 2 green peppers, cut into 8ths
  • 1 cup pineapple chunk
  • 3 tablespoons cornstarch
  • 2 -3 tablespoons soy sauce
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • hot cooked rice

Recipe

  • 1 brown lamb on all sides in hot oil. add chicken broth; cover and simmer about 15 minutes. add green pepper and pineapple and simmer 10 minutes longer. mix remaining ingredients, except rice. add slowly to lamb mixture, stirring until thickened. serve on rice.

Yakitori

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 1 1/2 cups mirin
  • 3/4 cup soy sauce
  • 4 tablespoons sugar
  • 1 garlic clove, pressed (optional)
  • 1 lb boneless chicken thighs
  • 1 -2 green onion, in inch-long pieces (optional)
  • 8 bamboo skewers

Recipe

  • 1 put mirin, soy sauce, sugar and garlic, if using, into a medium-sized sauce pan, and cook over medium heat until there is only half as much sauce remaining.
  • 2 let cool slightly while you are preparing the chicken.
  • 3 cut chicken into bite-sized pieces; keeping the skin on is usual in japan.
  • 4 thread chicken onto skewers, alternating with green onion if desired.
  • 5 begin grilling the chicken skewers on both sides without the sauce, when the meat starts changing color, brush the sauce on both sides, and continue grilling, brushing on sauce about 3 times total, and turning until done.

  • 1/3 cup orange juice
  • 2 tablespoons red wine vinegar

  • 2 oranges, peeled halved and sliced

  • 1 coat a large nonstick skillet with cooking spray; heat over medium-high heat. add chicken nuggets and cook 4 minutes, turning once, or until browned and heated through.
  • 2 stir orange juice, vinegar, oil, salt and pepper in large bowl. add greens, oranges, pineapple and onion; toss to mix and coat.
  • 3 put salad on serving plates and top with nuggets. sprinkle with cashews.

Recipe

  • 1 put everything but the chicken into a food processor and process until almost all of the cereal is pulverized.
  • 2 dredge the chicken in the eggs and then the cereal mixture.
  • 3 deep fry until golden brown.

  • 1/2 cup soy sauce

  • 1 garlic clove, crushed
  • 2 inches fresh gingerroot, grated
  • 1 lb boneless skinless chicken breast, cubed
  • 3 leeks, part only, cut into 1/2 inch pieces

Recipe

  • 1 in a medium dish, mix together the sake, soy sauce, sugar, garlic and ginger. add chicken, and allow to marinate for 15 minutes.
  • 2 preheat your oven's broiler.
  • 3 grease six metal skewers, and thread alternately with 3 pieces of chicken and 2 pieces of leek.
  • 4 place on a baking sheet or broiling pan, and brush with the marinade.
  • 5 broil for about 5 minutes, baste again, then broil for another 5 minutes, or until chicken is cooked through. discard remaining marinade.

  • 1/2 large chopped onion

  • 1 lb shredded colby cheese
  • 1 lb shredded cheddar cheese

  • 1 -2 cup sweet and sour sauce, according to taste preference
  • 24 egg roll wraps (about)
  • oil (for deep frying)

Recipe

  • 1 cook ground beef with onion and pepper.
  • 2 mix all ingredients together, except wraps and oil.
  • 3 heat oil.
  • 4 fill wraps with meat, cheese and rice mixture.
  • 5 deep fry until golden brown.

Stretch Steak Sandwiches

Ingredients

  • Servings: 4
  • 2 chuck steaks or 2 lamb steaks
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 2 onions, course chopped pieces
  • 1 green pepper, course chopped pieces
  • 2/3 cup regular barbecue sauce
  • 2 tablespoons apricot preserves
  • 4 whole wheat buns or 4 rolls or 4 tortillas

Recipe

  • 1 note: if you can't eat sugar, use 1 can 8oz tomato sauce and sugar free apricot preserves and 1 tsp vinegar or can diced tomatoes, blended with 2oz splenda and 1 tsp vinegar.
  • 2 1 green bell pepper, course chopped.
  • 3 partially freeze the steaks.
  • 4 then cut paper thin strips across the grain.
  • 5 in skillet, add olive oil,steak strips, salt,onions and green peppers.

Three Egg Omelette

Ingredients

  • 3 large free-range organic eggs, brought to room temperature
  • 2 tablespoons organic milk (a splash) or 2 tablespoons organic half-and-half (a splash)
  • 1 tablespoon european butter (i like italian from parma myself)
  • 1 pinch unrefined sea salt
  • 1 pinch fresh ground black pepper
  • 1/4 cup freshly grated sharp cheddar cheese (a handful)
  • 1 half-moon slice colby cheese with jalapenos or 1 slice monterey jack pepper cheese
  • chopped fresh chervil, chives (optional) or parsley (optional)
  • 1/4 cup chopped pre-cooked meats and raw vegetables, brought to room temperature (other favorite ingredients) (optional)
  • paprika (as desired) or hot sauce (as desired)

Recipe

  • 1 let the rooms come to room temperature. this is important to achieve the consistency of an egg crepe. add a splash of milk or cream.
  • 2 when they have warmed, whisk briskly with a grinder handle motion (a cook whips air into the eggs to give them fluffiness- no magic powder or secret spell).
  • 3 place butter into a large, nonstick skillet, over med-high heat. heat until butter melts, using your egg turner to spread the butter over the pan.
  • 4 add the eggs, and season with sea salt and black pepper. if using herbs, add them now.
  • 5 as the eggs start to cook, they will start to cling to the pan. as they do this, pick up the pan and swirl them around to help them evenly set. use your egg turner to sort of bump down the edges of the omelet on the pan sides, where the eggs stick to the pan.
  • 6 swirl the eggs until they are almost set/dry, with no runny areas of egg , then sprinkle with cheeses. if adding other ingredients, add them now.
  • 7 fold over one third of omelet onto center, top with other side. allow ingredients to get hot inside, then turn out onto a warm plate, then flip over seam side down.
  • 8 if you prefer, just fold the omelet in half and turn out onto plate, in a half moon shape.
  • 9 your omelet, if cooked right, should not have runny egg inside, and the exterior should be a light golden brown, not just ordinary egg-yellow.
  • 10 sprinkle with paprika or a douse of tabasco sauce, if you like. if you use ketchup, don't tell me about it. *laughs*.

Spinach And Mushroom Casserole

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • 1 cup diced asiago cheese
  • 1/2 teaspoon nutmeg, grated
  • 1/2 teaspoon pepper
  • 1 tablespoon compound butter (mixed-herb compound butter for veggies or meat)
  • 2 cups sliced onions
  • 6 cups sliced mushrooms
  • 10 cups fresh baby spinach
  • 1/4 cup diced sun-dried tomato
  • 1/2 cup diced asiago cheese

Recipe

  • 1 preheat oven to 325.
  • 2 cheese sauce:.
  • 3 in microwave oven melt butter. add flour and mix till all incorporated. whisk in milk, nutmeg and pepper and microwave till thickened. remove from microwave and stir in 1 cup of the cheese till melted.
  • 4 spinach mixture:.
  • 5 heat butter in a large frying pan.
  • 6 saute onions and mushrooms for 5 minutes.
  • 7 add spinach a couple cup at a time to wilt till all is incorporated.
  • 8 when wilted remove the mixture leaving all the juice.
  • 9 reduce the juices till almost gone and then add back to spinach mixture.
  • 10 stir in sun-dried tomatoes and cheese sauce.
  • 11 in a oiled casserole dish place 1/2 the mixture in then top with 1/4 cup cheese, layer rest of spinach then top with remaining cheese.
  • 12 bake for 30 minutes.

Swai Filets - Greek Basil, Garlic Parmesan

Ingredients

  • Servings: 2
  • 12 ounces swai fillets (2 filets. some are larger, some are smaller)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh greek basil (or sweet basil if you can't find the greek version)
  • 1 teaspoon garlic powder
  • 2 tablespoons grated parmesan cheese (one for each filet)
  • 1 lemon, juice of
  • salt and pepper (optional)

Recipe

  • 1 1) preheat oven to 350 degrees f.
  • 2 2) mix olive oil, garlic powder and basil in a small bowl.
  • 3 3) place filets into a greased baking pan long enough to hold a fully-flattened filet. (i use olive oil cooking spray).
  • 4 4) sprinkle lemon juice over the filets and let them stand for 10 minutes.
  • 5 5) brush olive oil/spice mixture over one side, flip and brush the other side.
  • 6 6) sprinkle parmesan over the fillets.
  • 7 7) bake for 15 minutes (times may vary according to your oven’s performance). usually, if the meat flakes easily with a fork, it's pretty much done.

Yakitori ( Seasoned Chicken On Skewers)

  • 500 g chicken thighs or 500 g chicken breast fillets, cut into 2 . 5 cm pieces
  • 1 medium red capsicum, chopped coarsely (200g)
  • 4 fresh shiitake mushrooms, stems removed, halved
  • 6 thick green onions, trimmed cut into 2 . 5 cm lengths
  • 1/4 teaspoon sansho pepper
  • 125 ml japanese soy sauce
  • 125 ml sake
  • 60 ml mirin
  • 2 tablespoons sugar

Recipe

  • 1 thread chicken and vegetables onto eight bamboo skewers, leaving space between pieces to allow even cooking.
  • 2 cook in batches, on heated oiled grill plate or barbecue, turning and brushing with sauce occasionally until browned all over and cooked through.
  • 3 serve yakitori sprinkled with japanese pepper.
  • 4 sauce- combine ingredients in small saucepan, bring to a boil.
  • 5 reduce heat and simmer uncovered over medium heat until sauce reduces by a third, cool.
  • 6 tips- bottled yakitori sauce can be bought from asian grocery stores.
  • 7 the sauce can be used as a marinade for the chicken before cooking, but cook chicken on medium heat so marinade does not burn before meat cooks through.
  • 8 you can substitute seven-spice mix (shichimi togarashi) for japanese pepper (sansho powder).

Yaki-mandu (korean Egg Roll)

Total Time: 1 hr 20 mins Preparation Time: 1 hr Cook Time: 20 mins

Ingredients

  • 1 lb ground beef or 1 lb ground lamb
  • 2 yellow onions, diced
  • 2 cups carrots, diced
  • 1/2 green cabbage, boiled and diced, squeeze out excess water
  • 2 green onions, cut thin
  • 1/2 cup mushroom, diced
  • 2 eggs, divided (one egg will be needed to seal wrapper)
  • 1/8 cup soy sauce
  • 1 pinch salt and black pepper
  • 2 (12 ounce) packages small egg roll wraps (found near produce section)
  • 1/4 cup soy sauce
  • 1 teaspoon red pepper
  • 1 teaspoon sesame seeds

Recipe

  • 1 keep the ground beef in the fridge until you are done preparing the rest of the ingredients.
  • 2 mix ingredients in large bowl (it's best to use your hands like preparing a meatloaf).
  • 3 scoop some of the mixture into a smaller bowl and keep the rest in the fridge until you are ready for it (wrapping is time consuming and you don't want the meat to be out any longer than it needs to be).
  • 4 mix a raw egg in a small bowl or cup, or use a small bowl of water.
  • 5 place a "sheet" of the egg roll wrap on work surface in front of you then spoon a teaspoonful of meat mixture into the center of the wrapper, dip finger into egg to spread it onto two adjoining edges of the wrapper and fold in half diagonally to seal it (will look like triangle).
  • 6 press edges together and gently hold egg roll in hand and carefully squeeze out excess air as you are sealing.
  • 7 deep fry until golden brown (for healthier method, steam/pan fry with less oil).
  • 8 dipping sauce: mix soy cause, red pepper and sesame seeds.

Yakitori Chicken Kabobs

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1/4 cup soy sauce
  • 1/4 cup firmly packed light brown sugar
  • 1/2 teaspoon ground ginger
  • 2 garlic cloves, pressed
  • 2 teaspoons apricot jam
  • 2 whole chicken breasts, skinned and boned
  • 8 green onions, cut in 1 inch pieces

Recipe

  • 1 prepare teriyaki sauce: combine soy sauce, sugar, ginger, garlic and jam in bowl. cut chicken into 1 inch pieces and add to sauce. refrigerate for 1 to 4 hours. (i go for 8 hours).
  • 2 to form kabobs, alternate pieces of chicken and green onion on 8-inch metal skewers. baste with teriyaki sauce.
  • 3 broil in preheated broiler 6 inches from heat for 10 minutes or until chicken is cooked through, turning skewers 3 to 4 times. although using the oven is the original directions, they can also be cooked on the grill.

Yam And Beef Stew

Total Time: 6 hrs 10 mins Preparation Time: 10 mins Cook Time: 6 hrs

Ingredients

  • 1 1/2 lbs stew meat
  • 2 large yams
  • 3 large carrots
  • 1/2 onion
  • 4 garlic cloves
  • 1 teaspoon rosemary
  • 1 teaspoon hickory smoke salt or 1 teaspoon liquid smoke
  • 1 teaspoon pepper
  • 1 tablespoon butter or 1 tablespoon ghee
  • 2 teaspoons bouillon (beef flavor, 'better than bouillon' brand)
  • 2 teaspoons salt
  • 2 tablespoons cornstarch
  • 1/2 cup hot water

Recipe

  • 1 place meat in crockpot, add 1 teaspoon of the salt and add all of the hickory smoke salt, pepper, and bouillon. add water until just covered. cook on high 4 hours.
  • 2 after four hours, peel and cut carrots and yams into bite size pieces and set aside.
  • 3 heat up butter in a medium fry pan on medium heat.
  • 4 mince garlic and chop onion.
  • 5 add garlic and rosemary and 1 teaspoon salt to the butter and saute for about 3 minutes.
  • 6 add onion and saute again for about 3 minutes.
  • 7 put garlic mixture and vegetables into the crockpot and cook on high another 2 hours.
  • 8 about a half hour before serving, mix cornstarch and water together until dissolved and then stir well into the crockpot. this will thicken it up, and it totally optional.

Tasty Ham-olive Spread

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup cooked ham, ground
  • 1/2 cup mayonnaise
  • 2 tablespoons celery, minced
  • 2 tablespoons green onions, minced
  • 1 tablespoon dijon mustard
  • 2 tablespoons diced green olives, with pimentos
  • 1/2 tablespoon parsley, minced
  • salt and fresh pepper
  • 1 dash tabasco sauce (optional)

Recipe

  • 1 place cubed left-over ham in food processor; pulse to grind. (careful, not too much).
  • 2 remove to mixing bowl and add remaining ingredients.
  • 3 refrigerate, covered, until ready to serve.
  • 4 serve with baquettes, crackers or sturdy tortilla chips.

Spanish Crab Tarts

Ingredients

  • Servings: 24
  • 24 wonton wrappers
  • 1 tablespoon extra virgin olive oil
  • 1/3 cup onion, finely chopped
  • 2 tablespoons red peppers, finely minced
  • 2 garlic cloves, minced
  • 1 cup button mushroom, minced
  • 1/2 cup tomato sauce
  • 3 tablespoons sherry wine, semi-sweet
  • 1/4 cup whipping cream
  • 1 cup crabmeat, loose
  • coarse salt & fresh ground pepper
  • parsley and grated parmesan cheese (to garnish)

Recipe

  • 1 preheat oven to 375 °f
  • 2 brush a 12-cup mini-muffin tin with olive oil and brush wonton wrappers lightly with oil. press into muffin cups and bake for 10 minutes, until golden.
  • 3 in a sauté pan over medium-high heat, add 1 tbsp oil, onion and pepper. sauté for 5 minutes until onion is tender.
  • 4 add garlic and mushrooms and sauté until mushrooms are soft and pan is dry.
  • 5 add tomato sauce, brandy and cream and cook 5 minutes to reduce.
  • 6 add crab to warm, and season to taste.
  • 7 spoon warm filling into baked shells and garnish with chopped parsley and grated cheese. serve warm.

Yaku's Stuffed Chicken

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 4 chicken breasts
  • 1/2 cup spinach
  • 1/2 cup red pepper
  • 1/2 cup smoked gruyere cheese
  • 50 ml sun-dried tomato dressing
  • 1 pinch salt and pepper
  • 1 pinch garlic, finely chopped
  • 1 clarified butter
  • 1/2 cup whipping cream
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 15 ml honey

Recipe

  • 1 make an incision in the side of chicken breast.
  • 2 mix all other ingredients (3/4 of the cheese) and equally stuff the four chicken breast with mixture, except butter and cream.
  • 3 in hot pan with clarified butter sear chicken and then bake for 12 min or until done.
  • 4 in sauce pan, heat cream, cinnamon, nutmeg and honey and rest of the cheese, whisking till smooth.
  • 5 place chicken on plate and pour sauce over chicken.
  • 6 garnish with red pepper and sage leaves.

Tasty Fried Lamb

Ingredients

  • Servings: 2
  • 500 g lamb (cut into cubes)
  • 1 lemon (freshly squeezed)
  • 1 small onion (chopped)
  • 1 dash garlic powder (or 1 small clove minced)
  • salt & freshly ground black pepper (to taste)
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon cumin (or more to taste)
  • 1/2 teaspoon paprika (or more to taste)
  • 1/3 cup corn oil (or other light vegetable oil)
  • 1/2 cup water

Recipe

  • 1 heat oil in pressure cooker.
  • 2 saute chopped onion with a dash of garlic powder or crushed clove.
  • 3 add meat and saute briefly until it browns slightly.
  • 4 add spices, lemon juice and water and cover pressure cooker.
  • 5 cook over medium heat for 30 minutes depending on your cooker. (mine takes 40 minutes, my mil's 20 minutes. be careful not to burn!
  • 6 you should end up with tender lamb and a little juice left. serve with rice and a green salad.

Tasty Ham And Cheese Sandwiches

Ingredients

  • 1 1/2 cups butter (do not use substitute)
  • 6 tablespoons brown sugar
  • 3 tablespoons mustard
  • 3 tablespoons worcestershire sauce
  • 2 tablespoons poppy seeds
  • 1 tablespoon honey
  • 24 hawaiian style rolls
  • 8 ounces sliced swiss cheese
  • 8 ounces sliced provolone cheese
  • 1 lb sliced ham (or other meat of choice)

Recipe

  • 1 put butter, brown sugar, mustard, worcesterchire sauce, poppy seeds and honey in med sauce pan and cook until butter melts and all ingredients blend well. cut rolls in half and place roll bottoms on baking sheet and brush on some butter mixture. layer cheeses and meat tearing to fit and desired amount. add roll tops. brush top with butter mixture. place in 350 degree oven for 20 minutes or until cheese melts and heated through. can use remainding sauce for dipping if desired.

Waterloo Baked Chicken

  • 1/2 kg mutton, cut into medium size pieces (leg)
  • 1 large red chile
  • 2 1/2 cm gingerroot

  • 2 black cardamom pods (badi elaichi)
  • 2 green cardamoms
  • 4 teaspoons coriander seeds
  • 3 large onions, sliced lengthwise
  • 4 tablespoons ghee or 4 tablespoons oil

Recipe

  • 1 gently wash and soak the rice in water. set aside.
  • 2 cook the mutton with the red chilli, ginger, fennel seeds, black and green cardamoms, coriander seeds and salt in a pressure cooker, adding eight cups of water. cook till tender, about 20 minutes.
  • 3 remove all the spices and strain the stock.
  • 4 the stock should measure five cups. add water if the stock is not sufficient. set aside.
  • 5 keep the mutton pieces separately.
  • 6 in a heavy bottomed vessel, heat the ghee (or oil), and add the bay leaf and cinnamon.
  • 7 add half the sliced onions and fry till light brown.
  • 8 add the mutton and the beaten yogurt and fry for a few minutes.
  • 9 stir in the rice gently, ensuring that it does not break. add the stock and cook the rice.
  • 10 cover and bring the stock to a boil over high heat, then simmer till the rice gets cooked.
  • 11 heat a little oil in a pan and fry the remaining onions till brown.

  • 1 make the barbecue sauce by combining all of the ingredients for the sauce in a medium saucepan over medium heat.

  • 1 to make sauce, combine all ingredients in a small saucepan. bring to a boil, remove from heat, and set aside.
  • 2 to prepare kebabs, cut thigh meat into bite-sized pieces. cut thick parts of onions into 1-inch pieces, discarding the leaves. (see comments for additional suggestions for skewers.).

Sweet And Sour Almond Chicken Bites

  • 6 tablespoons butter, melted
  • 1/2 teaspoon garlic salt

  • 1 (10 ounce) jar sweet and sour sauce, optional

Recipe

  • 1 place crushed cereal in a 1 gal.
  • 2 size kitchen storage bag.
  • 3 combine butter and garlic salt in shallow dish.
  • 4 dip chicken in butter mixture, then place in plastic bag.
  • 5 shake to coat chicken.
  • 6 place on a shallow baking pan.
  • 7 bake in a 375°f preheated oven for 15 to 20 minutes or until cooked through and juices run clear.
  • 8 serve with sweet and sour sauce if desired.

Swedish Corned Lamb Roast

Ingredients

  • 2 gallons water
  • 1 lb pickling salt
  • 1 teaspoon saltpeter, i made it without and it was fine (optional)
  • 8 lbs boneless lamb butt, tied (i used the latter) or 8 lbs lamb loin roast (i used the latter)
  • 2 bay leaves
  • 15 whole black peppercorns
  • 5 whole allspice

Recipe

  • 1 in a large stainless steel pot or pickling crock, mix the water, pickling salt, and saltpeter together until dissolved. untie the lamb roast and place in the pickling solution. place a heavy plate on top of the lamb so that it will remain submerged.
  • 2 cover and refrigerate for 10 days. check occasionally to be sure the lamb is covered by the liquid.
  • 3 after 10 days, remove the lamb and retie it into a roast. rinse well with fresh water. place the roast in a large cooking pot, cover with cold water, and add the remaining ingredients: bay leaves, peppercorns and whole allspice.
  • 4 bring to a boil, cover, and simmer 2 hours 15 minutes.
  • 5 slice the lamb and place on large platter.
  • 6 serve with sweet and hot mustard.

Sweet And Fiery Lamb Tenderloin

  • 1/2 teaspoon ground ginger
  • 1 lb lamb tenderloin

  • 1 large ripe mango, peeled, seeded and coarsely chopped
  • 1 -2 tablespoon fresh cilantro, chopped
  • 1 small garlic clove, minced

  • 1 for the salsa: combine all the ingredients in a bowl, season to taste with salt and pepper. refrigerate salsa until ready to serve. makes 1 cup.

  • 3 roast lamb in preheated oven 40 to 45 minutes or until desired lamb is cooked to your liking. (new lamb guidelines allow lamb to cook to 145°, if you prefer it cooked well, cook it until the internal temp reads is 160° with a meat thermometer).
  • 4 mix chili sauce, honey and sriracha in small bowl. brush over lamb during the last 10 minutes of cooking.
  • 5 slice lamb and serve with pan juices and mango salsa on the side.

Street Corner Sausages With Grilled Onions And Fennel

Ingredients

  • 1 small fennel bulb
  • 2 large yellow onions
  • 1 1/2 tablespoons olive oil
  • kosher salt
  • fresh ground black pepper
  • 6 fresh sausages, such as italian (each sausage should weight 4-5 ounces and be 1 1/4 inches thick)
  • 6 hot dog buns or 6 rolls, split
  • 1/2 cup spicy brown mustard (or to taste) or 1/2 cup coarse grain mustard (or to taste)

Recipe

  • 1 cut off the stalks and outer leaves of the fennel bulb.
  • 2 cut the bulb in to lengthwise slices, 1/8 inch thickness keeping the root end attached to prevent the slices from falling apart.
  • 3 slice the onion crosswise, making 1/2 inch width slices.
  • 4 lighty brush both sides of the fennel and onion slices with olive oil.
  • 5 season to taste with salt and pepper.
  • 6 grill the slices directly over medium heat for 12-14 minutes or until tender; turn once during grilling time.
  • 7 remove from the grill and allow to cool.
  • 8 cut away the bit of root from each fennel slice.
  • 9 cut the fennel and onion slices into 1/2 inch pieces.
  • 10 grill the sausages over direct medium heat for 12-15 minutes or until firm and no longer pink; turn once during grilling time.
  • 11 a few minutes before the sausages are cooked, toast the cut sides of the buns over direct medium heat.
  • 12 put a sausage inside a toasted bun; add some grilled fennel and onions; drizzle with mustard.

  • 18 lbs smoked ham
  • 1 (16 ounce) can fruit cocktail
  • 1 (12 ounce) can coca-cola
  • 2 cups corn syrup

  • 1 if possible, have your butcher remove the shank from your ham and package the shank meat separately. most will do this at no extra charge. you can use the shank meat as a base for other recipes.
  • 2 if you can find the brown sugar flavor of karo corn syrup, use it rather than regular corn syrup. grocers sometimes only carry this flavor during the holiday season.
  • 3 make sure your ham is completely thawed before cooking.
  • 4 remove the wrapper from your ham, and rinse your ham under cold water.
  • 5 to make your glaze pour your can of fruit cocktail into your blender. puree it into liquid, then pour it into a large bowl. add your brown sugar and coca cola. hand stir gently for a few minutes until the glaze is consistent.
  • 6 protect your baking pan by spraying it with cooking spray then covering the bottom with heavy duty tinfoil.
  • 7 place your rack in the pan, then place your ham on the rack.
  • 8 if you have a food injector, load your syringe about 5 times and inject your glaze into the fatty pockets of your ham. this will ensure the inside of your ham is as tasty as the outside.
  • 9 drizzle about half your glaze over your ham, then cover the ham loosely with a tent of aluminum foil.

  • 1 in a large bowl, mix together the soy sauce, mirin, honey, ginger and garlic.
  • 2 add the chicken and stir well. cover and leave to marinate in the fridge for 1-2 hours or overnight.
  • 3 preheat the broiler to high. thread the chicken, scallions and pepper pieces alternately, dividing them between 4 metal skewers, reserving the marinade.
  • 4 place the kebabs on the grill rack and brush liberally with the marinade. cook for 10-15 minutes, turning occasionally and basting with the marinade.
  • 5 the chicken should be cooked until the juices run clear and there is no pink meat; the vegetables should be lightly charred. serve immediately.

  • 2 tablespoons vegetable oil
  • 1/4 cup onion, minced
  • 1 1/2 cups water
  • 1/2 cup tomato paste
  • 1/2 cup vinegar
  • 1/2 cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon worcestershire sauce
  • 1 3/4 teaspoons salt
  • 1 teaspoon jim beam bourbon whiskey
  • 1 teaspoon liquid smoke
  • 1/4 teaspoon black pepper, coarse grind
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon paprika

Recipe

  • 1 to make ribs cut each rack in half, so that you have half-racks. sprinkle tops and bottoms of each rack lightly with salt and more generously with pepper. wrap the ribs in aluminum foil and bake in preheated 300 degree oven for 2 1/2 hours.
  • 2 as the ribs cook, make the suace by heating the oil in a medium saucepan over medium-high heat. saute' the onions for about 5 minutes or until they start to brown. add the remaining ingredients and bring to a boil. reduce heat and simmer for 1 1/4 hours, uncovered, or until sauce thickens. remove from heat and set aside until ribs are ready.
  • 3 preheat grill.
  • 4 when the ribs are finished in the oven, the meat should have pulled back about 1/2" from ends of the bones. remove ribs from oven and let sit about 10 minutes or so, then remove ribs from foil and put on the grill. grill ribs for 3-4 minutes per side. they should be slightly charred in a few spots when they are finished. brush bbq sauce on the ribs while they are grilling, just before you serve them. don't add the sauce too early or it will burn.

  • 2/3 cup olive oil

  • 1/3 cup chives, finely chopped
  • 1 1/2 tablespoons capers packed in salt, rinsed and finely chopped
  • 8 cornichons, finely chopped
  • 1 pink grapefruit, peeled and segmented
  • 1 avocado, peeled and cut into wedges
  • 3 cups lambs lettuce (mache) or 3 cups watercress leaves

  • 1 if using live yabbies, bring a large saucepan of heavily salted water to the boil. add yabbies and cook, covered, for 8 minutes or until shells turn bright orange. drain and leave to cool at room temperature - do not rinse. (if using cooked yabbies or prawns, there is no need for additional cooking.) once the yabbies are cool, break off the claws. hold the head with 1 hand and the tail with the other, then twist to separate and discard head. using kitchen scissors, cut the shell down the side of the tail, then carefully remove meat. using crab crackers, crack the claws and remove the meat.

Recipe

  • 1 in a large pot, brown ground beef and ground lamb.
  • 2 once browned, add green onions, ginger, carrots, and cabbage.
  • 3 cook vegetable/meat mixture until cabbage leaves are slightly translucent.
  • 4 add oyster sauce and soy sauce.
  • 5 in another pot, boil water.
  • 6 once boiling, place ramen noodles into water and place spice packet to the side.
  • 7 once noodles are cooked, drain and add to vegetable/meat mixture.
  • 8 add spice packets, salt and pepper and mix thoroughly.

Ya Makin' Curry Goat

  • 3 garlic cloves, crushed

  • 1/2 teaspoon curry powder, for seasoning the meat
  • 1 1/2 tablespoons curry powder, for cooking
  • 1/4 teaspoon cumin
  • 3 tablespoons cilantro
  • 1/2 teaspoon ketchup
  • 3 1/4 cups water

Recipe

  • 1 wash and drain goat. season with salt, pepper, thyme, tomato, 1/2 teaspoon curry, cumin, cilantro, and ketchup. mix well and marinade in fridge for at least 2 hours
  • 2 in a coated pot on medium/high heat, saute onion and garlic.
  • 3 add the pepper and 1 1/2 tbsp curry and cook about 2 minutes, until it's really thick.
  • 4 add 1/4 cup of water and cook on medium heat for 5 minutes. keep stirring.
  • 5 raise heat and add goat, stirring to coat the meat. cover and simmer.
  • 6 add 3 cups of water to the bowl that had the goat and set aside.
  • 7 stir every few minutes for about 25 minutes, remove lid and turn up the heat. when you can stir and see the bottom without any liquid, add the water. bring to boil, turn heat to low.
  • 8 cover cook for about 2 hours, stirring every 15 minutes. if needed, turn up the heat to thicken the gravy, being careful not to burn.

Yah Mon! Jerked Turkey Jerky

  • 1 combine marinade ingredients in a plastic zipper bag.
  • 2 add turkey slices and coat thoroughly with marinade; refrigerate overnight.
  • 3 if you have a dehydrator, use it.
  • 4 i use my oven; it only goes down to 170 degrees f.
  • 5 cover oven rack with aluminum foil then preheat to 170 degrees; place marinated turkey breast strips on baking racks and place racks in the oven.
  • 6 prop open oven door slightly with an oven mitt to allow humidity to escape.
  • 7 check turkey after about 4 hours; mine takes between 4 and 4-1/2 hours in a 170 degree f oven.

Yabbie Or Crayfish Fettuccine

  • 3/4 lb sweet potato, diced (400 grams)

  • 2 tablespoons cilantro, chopped
  • 3/4 cup light coconut cream
  • 1 cup milk
  • 1 tablespoon cornflour
  • 1 lb fettuccine
  • 1 lb yabbie meat (500 grams) or 1 lb crawfish meat, poached (500 grams) or 1 lb prawns, cooked (500 grams)
  • herbs, sprigs for garnish

Recipe

  • 1 heat olive oil in a large pot. stir in onion and cook over medium heat until translucent, but not brown.
  • 2 add diced sweet potato, and stir over low heat for about 4 minutes.
  • 3 add 2 cups water and simmer for a further 4 minutes. add can of pumpkin soup. add curry powder and seasoning, together with chopped herbs. add coconut cream. lastly, add cup of milk, mixed with cornflour. simmer together for five minutes.
  • 4 remove from heat. can either be served with vegetable chunks in sauce, or pureed in a blender.
  • 5 bring a saucepan of water to the boil and add the fettuccine. boil for 10 minutes or until al dente. drain and toss with yabbies or prawns. serve in a deep bowl with a generous ladle of sauce mixture and serve.
  • 6 garnish with a sprig of fresh herbs.

Yakitori (chicken On Skewers)

  • 1 soak 25 wooden skewers in water for 20 minutes.
  • 2 cut chicken into bit size pieces.
  • 3 combine sake, soy, mirin, and sugar in small pan, bring to boil, set aside.
  • 4 thread chicken on skewers, alternatively with the scallions.
  • 5 place skewers on foil lined tray and cook under preheated grill, turning and brusshing frequently with sauce for 7 - 8 mins, or til chicken is cooked.

  • 1 in a 9x13 inch casserole, combine soy sauce, brown sugar, oil, ginger, and garlic powder.

  • 3 cover the dish and refrigerate for at least 4 hours. turn the chicken again, after 2 hours.
  • 4 preheat oven to 350 degrees f (175 degrees c).
  • 5 bake chicken at 350 degrees f (175 degrees c), covered, for 45 minutes. turn the chicken wings, and spoon sauce from the bottom of the pan over the tops of the wings. cook an additional 50 minutes, uncovered.

  • 1/2 cup orange puree
  • 2 tablespoons jam, no-sugar (strawberry, grape or seedless raspberry)

  • 1 lb lean ground beef

  • 1 orange puree: in a medium saucepan over medium-high heat, combine sweet potato and carrots and enough cool water to cover the vegetables. bring to a boil and cook for about 20 minutes or until the carrots are very tender.
  • 2 drain vegetables, then transfer them to a food processor. add 2 tablespoons of the water.
  • 3 purée on high until very smooth. stop as needed to scape sides of bowl. if needed, add another tablespoon of water to ensure a smooth consistency.
  • 4 the purée can be refrigerated for up to 3 days, or frozen in 1/4 cup portions for up to 3 months.
  • 5 meatballs: heat oven to 350°f use oil to coat a rimmed baking sheet. in a large bowl, whisk together egg, garlic, ginger, orange purée, jam, ketchup, salt and wheat germ. add ground meat and mix with your hands until well combined.
  • 6 using damp hands, pinch off large tablespoons of the meat mixture and gently shape into balls. arrange meatballs on prepared baking sheet. bake for 10 minutes, then use a spatula to flip meatballs and cook for another 10 minutes or until browned.

Spanish Inspired Stuffed Peppers

  • 2 cut peppers in half and scoop out the insides. place in a 13x9 baking pan. brown chorizo and onions together. then add the corn, rice, tomato sauce, cumin, paprika and pepper flakes. stuff peppers.
  • 3 bake them for 45 minutes in oven.
  • 4 while the peppers are baking, make the goat cheese cream sauce. melt butter in a saucepan on medium heat. add flour and cook until a paste is formed. add milk, lower heat to low. cook until it begins to thicken. add goat cheese and continue cooking until thickens.
  • 5 place the peppers on a plate and spoon the cheese sauce on top and enjoy!

  • 4 meanwhile, in a small batter bowl, combine cranberry sauce, ketchup, marmalade, brown sugar, and worcestershire sauce; mix well.
  • 5 pour sauce over meatballs; mix gently to coat meatballs evenly. return to oven; continue baking 15 minutes. stir gently before serving.

  • 2 pour the can of beans into a 9x13 inch baking dish so they cover the bottom. arrange hot dog slices so they cover the beans as completely as possible. if too much juice seeps through to the cornbread, it will take longer to cook. prepare cornbread mix according to package directions. spread the batter evenly over the hot dog layer.
  • 3 bake for 35 to 40 minutes, or until cornbread is cooked through. a toothpick inserted into the center should come out clean.
  • 4 note: feel free to doctor up the beans to your liking first.

Slow Lamb Roast

  • 1 rinse lamb roast.
  • 2 cut slits all over roast.
  • 3 insert garlic slices in all slits.
  • 4 rub black pepper and garlic salt heavily over entire roast (saltiness will deplete during cooking).
  • 5 pour a generous amount of dark soy sauce and rub all over roast, especially into the garlic slits.
  • 6 roast fat side up on 300 degrees on top shelf of oven.
  • 7 every 30-45 minutes brush or pour soy sauce over roast.
  • 8 cook until meat thermometer stuck in center of roast registers at least 180 degrees.

  • 3 place on broiler pan . cook for until done turning over halfway through.
  • 4 as an added little extra flavor sprinkle with toasted sesame seeds when done.

  • 2 tablespoons black olives
  • 4 ounces cream cheese
  • 1 teaspoon oregano

  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 mozzarella string cheese
  • 1 (14 ounce) can pizza dough
  • 3 tablespoons italian dressing

  • 1 finely chop the pepperoni. drain and finely chop the mushrooms. finely chop the black olives. combine pepperoni, mushrooms, olives, cream cheese, oregano, garlic powder, 2 tablespoons parmesan, and salt and pepper in medium bowl. stir well.
  • 2 cut each cheese stick into six 1/2 inch pieces.
  • 3 on a floured surface roll out pizza dough to a 12 by 18 inch rectangle. brush dough with 2 tablespoons of italian dressing. cut into 24 equal pieces. place one piece of the mozzrella cheese on each piece and a scant tablespoon of pepperoni mixture. bring all four corners together and pinch to seal. brush with remaining italian dressing and sprinkle with remaining parmesan cheese and extra oregano. place about 1 inch apart on baking sheet. heat oven to 375 degrees. bake 15 to 20 minutes. makes 24 appetizers. can be served with warmed pizza or marinara sauce.

Sweet And Savory Brandy Sauce For Lamb Tenderloins

  • 1 (1 lb) lamb tenderloin
  • 3 tablespoons butter
  • 1 cup brandy
  • 1/3 cup brown sugar
  • 1 small yellow onion, chopped
  • 3 large garlic cloves, crushed
  • 3 large fresh basil leaves

  • 1 in medium size bowl, mix brandy, brown sugar, onion and garlic. set aside.
  • 2 melt the butter in a large frying pan until bubbly, then slowly add the brandy mixture.
  • 3 stir the sauce until it comes to a boil, then crush the basil and drop it into the pan.
  • 4 let the sauce boil for about five minutes, then bring the stove to a simmer.
  • 5 place the lamb loin into the frying pan, and cover.
  • 6 let the lamb simmer until it reaches an internal temperature of 160-165 degrees.
  • 7 let stand for about five minutes, then serve and enjoy!

  • 2 lbs ground beef (we buy a local grass fed beef or buffalo but ground turkey is good, too)

  • 2 teaspoons minced garlic
  • chili sauce, 8 to 12 ounces (read recipe introduction)

  • 1 -2 teaspoon salt-free taco seasoning mix, to taste
  • 12 flour tortillas (for fun i used mini taco shells) or 12 corn taco shells (for fun i used mini taco shells)
  • shredded cheddar cheese, fresh cilantro, shredded lettuce, crema mexicana (can substitute other cheese varieties ( queso fresco, cotija, etc.) or sour cream

  • 1 note: i make my own cranberry sauce and freeze for later use in recipes. or, if you have any leftovers from the holidays, that works out conveniently, too. i recommend this basic recipe: basic cranberry sauce.
  • 2 cook beef, onion and garlic in large skillet over medium-high heat, stirring frequently, for 6 to 8 minutes or until beef is cooked through and vegetables are softened; drain.
  • 3 stir chili sauce, cranberry sauce and seasoning mix into beef mixture.
  • 4 reduce heat. cook for 10 minutes or until flavors are blended. do not allow mixture to dry out, adding a little bit of water if necessary.
  • 5 divide beef mixture evenly among taco shells.
