Ingredients

- 1 lb chicken breast (boneless, skinless)
- 2 bunches scallions, trimmed
- 1/4 cup sake or 1/4 cup dry wine
- 1/4 cup soy sauce
- 1 tablespoon sugar
- 1 teaspoon grated fresh ginger
Recipe
- 1 prepare hot fire. cut chicken into 1 ½ inch cubes.
- 2 cut scallions into 2 inch lengths, with some green tops.
- 3 thread 3 or 4 pieces of chicken onto 12 skewers, alternating with pieces of scallion.
- 4 in a small bowl, mix together remaining ingredients.
- 5 place skewers on an oiled grill and brush with soy mixture, turning occasionally, until chicken is through, 5-7 minutes.
