Xinjiang Style Hot Pot

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 tablespoons vegetable oil
  • 1 lb lamb or 1 lb mutton, cut into 1 inch cubes
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 carrot, chopped
  • 1 turnip, chopped
  • 2 tomatoes, chopped
  • 1 inch fresh ginger, finely sliced
  • 1 1/4 cups water
  • 1 teaspoon salt

Recipe

  • 1 in a deep sided skillet, heat the oil and stir fry the lamb cubes for 2 minutes, until the cubes are lightly browned on all sides.
  • 2 transfer meat to a dutch oven and add all of the other ingredients. mix well.
  • 3 bring to a boil and then cover. allow to simmer on low heat for 35 minutes. serve over rice.
