Xinjiang Style Hot Pot

Ingredients

- 2 tablespoons vegetable oil
- 1 lb lamb or 1 lb mutton, cut into 1 inch cubes
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 carrot, chopped
- 1 turnip, chopped
- 2 tomatoes, chopped
- 1 inch fresh ginger, finely sliced
- 1 1/4 cups water
- 1 teaspoon salt
Recipe
- 1 in a deep sided skillet, heat the oil and stir fry the lamb cubes for 2 minutes, until the cubes are lightly browned on all sides.
- 2 transfer meat to a dutch oven and add all of the other ingredients. mix well.
- 3 bring to a boil and then cover. allow to simmer on low heat for 35 minutes. serve over rice.
