Sweet 'n' Smoky Baked Beans

Ingredients

- 1 lb beans
- 3 tablespoons butter
- 1 medium onion, chopped
- 1/2 lb smoked sausage, diced
- 4 -6 garlic cloves, finely chopped
- 1/4 cup sugar
- 1/4 cup maple syrup
- 1 tablespoon dry mustard
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon dried rosemary
- 1/2-1 teaspoon cayenne pepper
- 2 cups chicken stock or 2 cups broth
- 12 ounces dark beer (such as guinness)
- 1 (14 ounce) can diced tomatoes, regular or fire roasted
- 1 tablespoon dried parsley
- salt and pepper
Recipe
- 1 soak beans 8 hours or overnight in large covered pot. rinse. cover beans with fresh water (about 2-3 inches over top of beans) and bring to boil. cover and let rest for 1/2 hour. drain. remove from pan.
- 2 melt butter in same pot. saute onions 3-5 minutes until carmelized. add sausage and cook til done. add garlic, sugar, syrup, mustard, vinegar, rosemary, cayenne pepper, and chicken stock or broth. stir until well mixed. add beans and beer and stir well.
- 3 pour bean mixture into a large casserole dish and cover. bake for 1.5 hours in a 350 degree oven. remove from oven and mix in tomatoes, parsley, and salt and pepper.
