Tangy And Sweet Roast Lamb (nesco Roaster Oven Recipe)

Total Time: 2 hrs 50 mins Preparation Time: 20 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 10
  • 1 (6 -8 lb) lamb loin roast, center cut
  • 2 tablespoons dijon-style mustard
  • 2 tablespoons margarine
  • 1 tablespoon brown sugar
  • 1/2 tablespoon ground black pepper
  • 1 teaspoon thyme, crushed

Recipe

  • 1 preheat electric roaster oven to 400.
  • 2 lightly wipe cookwell with cooking oil.
  • 3 add margarine; cover, cook until melted.
  • 4 arrange lamb roast in preheated cookwell. cover; roast 10 minutes.
  • 5 reduce temperature to 325ºf.
  • 6 combine remaining ingredients.
  • 7 remove rack with meat to a heatproof surface.
  • 8 spread mustard mixture over roast.
  • 9 set rack in cookwell.
  • 10 cover; roast 2 to 2-1/2 hours.
  • 11 note: you could also make this in a regular oven by following the instructions with a regular roaster pan with cover. remove the lid to brown during the last half hour of cooking.
