Chili

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 4 cups chicken (cubed)
  • 2 tablespoons olive oil
  • 1 cup bell pepper (chopped)
  • 1 cup yellow onion (chopped)
  • 5 garlic cloves (minced)
  • 3 (16 ounce) cans cannellini beans
  • 2 cups chicken broth (i sometimes sub 4 bullion cubes in 2 c. water)
  • 1 (4 ounce) can green chilies
  • 1 tablespoon fresh cilantro
  • 1 tablespoon dried basil
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons dried parsley
  • 1/2 teaspoon cayenne pepper
  • 8 ounces sour cream
  • 2/3 cup heavy cream

Recipe

  • 1 cook chicken in olive oil in a large pot.
  • 2 add onion, bell pepper, and garlic and cook until tender.
  • 3 add the rest of the ingredients except sour and heavy cream and simmer for at least 15 minutes to let flavors blend (the longer the better).
  • 4 add heavy and sour cream and simmer for an additional 5 minutes.
  • 5 serve with sour cream and crusty baguette.
