Spice-rubbed Lamb-tenderloin

Ingredients

  • Servings: 4
  • 4 teaspoons oil
  • 2 tablespoons curry powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 lbs boneless lamb loin roast, trimmed of fat (or lamb tenderloin)

Recipe

  • 1 heat broiler. mix first 5 ingredients, coating meat with this mixture. place it on a rack in a broiling pan.
  • 2 put pan 5/7-inches from the heat source. broil 15/20 minutes, turning once during this time. (internal temperature will be 160 f.) let meat rest in cutting board for 5 minutes before cutting (temperature will raise 5/10 degrees in the meantime). slice in an angle and serve.
