Zesty Rice With Chorizo

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 1 (3 1/2 ounce) package chorizo sausage, cut up
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3/4 cup uncooked long-grain rice
  • 1 3/4 cups swanson chicken broth
  • 1/2 cup chunky salsa
  • 1/2 cup frozen peas
  • fresh cilantro leaves, chopped

Recipe

  • 1 heat oil in a 10-inch skillet over medium-high heat. add sausage, onion and garlic and cook until vegetables are tender, stirring frequently.
  • 2 stir in rice, broth and salsa. heat to a boil. reduce heat to low. cover and cook for 15 minutes. stir in peas and cook, covered , 5 minutes or until thoroughly cooked. stir in cilantro.
