Tortilla Pie With Chorizo

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 tablespoons lard or 2 tablespoons vegetable oil
  • 1 1/4 lbs ground lamb
  • 3 garlic cloves, crushed
  • 2 teaspoons dried oregano
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon black pepper
  • 2 tablespoons dry sherry
  • 1 teaspoon caster sugar
  • 1 teaspoon salt
  • 12 corn tortillas
  • oil (for frying)
  • 3 cups mexican cheese
  • 1 1/4 cups creme fraiche
  • 2 cups canned tomatillos, drained
  • 4 tablespoons water
  • 2 serano chilies, seeded and chopped
  • 2 garlic cloves
  • 1 bunch cilantro
  • 1/2 cup sour cream

Recipe

  • 1 preheat oven to 350f,heat lard in a large sauce pan,add lamb and crushed garlic,stir over medium heat until meat is browned.stir in oregano,cinnamon,cloves and pepper,cook for 3 min,stir constantly,then add sherry,sugar and salt,stir for another 3 min.remove from the heat.
  • 2 cut the tortilla into 3/4 inch strips,heat oil in a frying pan and fry the tortilla strips until crispy and golden brown.
  • 3 spread half of the lamb mixture in a baking dish,top with half of the tortilla strips and cheese,add dollops of creme fraiche,repeat the layers,bake for 20-25 min or until bubbling.
  • 4 meanwhile,make the tomatillo sauce:put all ingredients except sour cream in a blender,process until smooth,pour into a sauce pan and bring to a boil,then lower the heat and simmer for 5 minute.
  • 5 stir the sour cream into sauce,season with salt and pepper,pour the mixture on top and sprinkle with cilantro,serve immediately.
