Spiced Mixed Fruit

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 (20 ounce) can sliced pineapple
  • 1 (20 ounce) can whole apricots
  • 1 (20 ounce) can whole figs
  • 1 (29 ounce) can peaches, halves
  • 2/3 cup light brown sugar
  • 1 cup cider vinegar
  • 1/2 teaspoon salt
  • 4 cinnamon sticks
  • 2 teaspoons whole allspice
  • 1 1/2 teaspoons whole cloves
  • 1/2 cup red maraschino cherry

Recipe

  • 1 drain fruit juices into saucepan. add sugar, vinegar, salt, and cinnamon. tie allspice and cloves in small cheesecloth bag and add to juices. heat to boiling point and boil 5 minutes. add all fruits and simmer 10 minutes. do not boil. cool. remove bag of spices. cover and chill at least 24 hours before serving. good with meat or poultry as a relish, or with whipped cream for an unusual dessert. fruit will keep several weeks in refrigerator without canning. the recipe did not say how many servings. i guess about 16. prep time does not include 24 hour chilling.
