Stuffed Smoked Lamb Chops

Ingredients
- Servings: 4
- 4 half-inch-thick bone-in smoked lamb chops
- 1 cup grated gruyere
- 1 tablespoon dijon mustard
- 1/8 teaspoon pepper
- 2 tablespoons vegetable oil
Recipe
- 1 cut through middle of lamb to make a pocket.
- 2 mix cheese & mustard and spoon into pockets.
- 3 press chop down to flatten and sprinkle with pepper.
- 4 add oil to skilled and cook over med-high heat until browned (3-4 min./side).
- 5 remove from heat, cover & let stand 5 minutes.
