Vegetable-beef Barley Soup

Ingredients

  • Servings: 10
  • 1 1/2 lbs beef stew meat
  • 2 small bell peppers
  • 1 (10 ounce) package green beans
  • 1 small chopped onion
  • 1 cup uncooked barley
  • 1 can corn
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon salt
  • 1/4 pepper
  • 2 cans ready-to-serve beef broth
  • 2 (14 1/2 ounce) cans diced tomatoes with garlic, undrained
  • 1 (8 ounce) can tomato sauce

Recipe

  • 1 combine all ingredients in slow cooker.
  • 2 cover and cook on low heat setting 8 to 9 hours (on high heat setting for 4 to 5 hours) or until vegetables and barley are tender.
