Vegetarian (or Vegan) Black Bean Chili

Total Time: 6 hrs 20 mins Preparation Time: 20 mins Cook Time: 6 hrs

Ingredients

  • Servings: 6
  • 1 large onion, chopped
  • 2 -4 garlic cloves, minced
  • 2 fresh jalapeno peppers, seeded and minced
  • 1 (28 ounce) can chopped tomatoes, undrained
  • 2 small black beans, undrained
  • 1 (12 ounce) package vegetarian ground beef or 1 (12 ounce) package similar ground meat substitute
  • 2 beef bouillon cubes (omit for vegan)
  • 1 tablespoon chili powder
  • 1 tablespoon cumin powder
  • 1/8 teaspoon cayenne pepper (to taste)

Recipe

  • 1 place all ingredients in a crock pot and stir well. turn on low and cook for 6 -7 hours, stirring regularly. serve with rice, nachos, potatoes or sweet potatoes. top with shredded cheese, sour cream and/or frank's red hot sauce.
