Vegetarian (or Vegan) Black Bean Chili

Ingredients
- Servings: 6
- 1 large onion, chopped
- 2 -4 garlic cloves, minced
- 2 fresh jalapeno peppers, seeded and minced
- 1 (28 ounce) can chopped tomatoes, undrained
- 2 small black beans, undrained
- 1 (12 ounce) package vegetarian ground beef or 1 (12 ounce) package similar ground meat substitute
- 2 beef bouillon cubes (omit for vegan)
- 1 tablespoon chili powder
- 1 tablespoon cumin powder
- 1/8 teaspoon cayenne pepper (to taste)
Recipe
- 1 place all ingredients in a crock pot and stir well. turn on low and cook for 6 -7 hours, stirring regularly. serve with rice, nachos, potatoes or sweet potatoes. top with shredded cheese, sour cream and/or frank's red hot sauce.
