Veggie Packed Turkey Meatloaf W/ Creole Sauce

Ingredients

  • Servings: 6
  • 1 lb ground turkey
  • 1 medium carrot, shredded
  • 1 small zucchini, shredded and squeezed dry
  • 1 small onion, chopped
  • 1/2 bell pepper, finely chopped (red or green)
  • 1 teaspoon italian seasoning
  • 2 tablespoons worcestershire sauce
  • 1 cup breadcrumbs
  • 2 medium eggs
  • 1/2 tablespoon sesame seeds
  • 2 cups water
  • 1 (4 ounce) can tomato paste
  • 30 ml sugar substitute (liquid) or 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1 1/2 cups celery, chopped
  • 1/2 cup onion, chopped
  • 1 teaspoon italian seasoning

Recipe

  • 1 place all ingredients for the sauce into a sauce pan and bring the mixture to a boil.
  • 2 reduce the heat to simmer, cover and cook for 2 hours.
  • 3 preheat oven to 400 degrees.
  • 4 spray a pan with nonstick cooking spray.
  • 5 crumble the ground meat into a large bowl; add the shredded carrots, zucchini, onion and pepper.
  • 6 add the italian seasoning, sesame seeds, bread crumbs and worcestershire sauce. mix ingredients lightly with a fork until well blended.
  • 7 form into loaf and cook uncovered for 60 minutes or until done.
  • 8 at the end of the cooking time, check the sauce for thickness.if the sauce is thin, thicken it with 1/4 cup cornstarch dissolved in cup of water. serve immediately with creole sauce.
