Bean Chicken Chili

Ingredients
- Servings: 6
- 1 lb boneless skinless chicken breast
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 (15 ounce) cans beans
- 4 -8 ounces diced green chilies
- 1/2 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 tablespoons lime juice
- 2 tablespoons cilantro, minced
- 1/2 teaspoon ground pepper
- 8 ounces frozen corn, if desired (optional)
- 2 chicken bouillon cubes
- 2 cups water
Recipe
- 1 boil chicken in water with bouillon until cooked through.
- 2 remove chicken from water, cube chicken and spoon fats out of the liquid.
- 3 saute onion and garlic in oil until just tender.
- 4 add onion, garlic, beans, chiles and seasonings to the chicken liquid.
- 5 bring to a boil and reduce heat.
- 6 add diced chicken and simmer for 5 minutes.
- 7 stir in lime juice and cilantro.
- 8 can also be cooked in the crock pot but i suggest adding the lime and cilantro just before serving!
