Bean Chicken Chili

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 (15 ounce) cans beans
  • 4 -8 ounces diced green chilies
  • 1/2 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, minced
  • 1/2 teaspoon ground pepper
  • 8 ounces frozen corn, if desired (optional)
  • 2 chicken bouillon cubes
  • 2 cups water

Recipe

  • 1 boil chicken in water with bouillon until cooked through.
  • 2 remove chicken from water, cube chicken and spoon fats out of the liquid.
  • 3 saute onion and garlic in oil until just tender.
  • 4 add onion, garlic, beans, chiles and seasonings to the chicken liquid.
  • 5 bring to a boil and reduce heat.
  • 6 add diced chicken and simmer for 5 minutes.
  • 7 stir in lime juice and cilantro.
  • 8 can also be cooked in the crock pot but i suggest adding the lime and cilantro just before serving!
