Spiced Lamb Tenderloin

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 teaspoons ground cinnamon
  • 2 tablespoons ground ginger
  • 1/4 cup ground coriander
  • 1/4 cup brown sugar
  • 6 tablespoons bacardi golden rum
  • 3 1/2 lbs lamb tenderloin, fat trimmed
  • salt & freshly ground black pepper
  • 3 tablespoons olive oil

Recipe

  • 1 preheat oven to 400 deg.
  • 2 combine cinnamon, ginger, coriander, brown sugar and rum in small mixing bowl.
  • 3 rub lamb with spice mixture and season with salt and pepper.
  • 4 heat oil in pan& sear lamb until golden brown on all sides.
  • 5 transfer lamb to baking sheet and place in oven for 15-20 mins.
  • 6 or until it reaches an internal temp of 155.
