Spiced Lamb Tenderloin

Ingredients

- 2 teaspoons ground cinnamon
- 2 tablespoons ground ginger
- 1/4 cup ground coriander
- 1/4 cup brown sugar
- 6 tablespoons bacardi golden rum
- 3 1/2 lbs lamb tenderloin, fat trimmed
- salt & freshly ground black pepper
- 3 tablespoons olive oil
Recipe
- 1 preheat oven to 400 deg.
- 2 combine cinnamon, ginger, coriander, brown sugar and rum in small mixing bowl.
- 3 rub lamb with spice mixture and season with salt and pepper.
- 4 heat oil in pan& sear lamb until golden brown on all sides.
- 5 transfer lamb to baking sheet and place in oven for 15-20 mins.
- 6 or until it reaches an internal temp of 155.
