Teriyaki Ginger Lamb Tenderloin

Ingredients
- Servings: 4
- 1 (1 lb) lamb tenderloin
- 1 1/2 tablespoons teriyaki sauce
- 1 1/2 teaspoons cornstarch
- 1/4 teaspoon ground ginger
- 1 (6 ounce) can pineapple juice
Recipe
- 1 trim visible fat from lamb.
- 2 slice tenderloin into 1/2 inch thick slices.
- 3 flatten slices with palm of hand.
- 4 spray a large nonstick skillet with nonstick cooking spray; place skillet over medium-high heat until hot.
- 5 add lamb; cook 3 minutes on each side or until browned.
- 6 mix together teriyaki sauce and remaining ingredients; stir to blend well.
- 7 add to skillet; bring to a boil; lower heat and simmer 3 minutes.
- 8 remove lamb from skillet; spoon sauce over lamb.
