Bean, Sausage And Spinach Soup

Ingredients
- 1 tablespoon olive oil
- 1 (14 ounce) turkey kielbasa, cut into 2 inch pieces on angle
- 1 sweet onion, finely chopped
- 2 garlic cloves, minced
- 3 cups low sodium chicken broth (or vegetable broth)
- 3 cups water
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 4 cups baby spinach

Recipe
- 1 in a soup pot, warm olive oil over medium heat. add sausage and cook, stirring until browned all over, about 5 minutes. transfer to a paper towel lined plate to drain. discard all but 1 tbs of fat from pot.
- 2 add onion and garlic to pan and cook stirring often, until soft, about 3 minutes.
- 3 return sausage to pot and add chicken broth, 3 cups water and beans. bring to a boil, reduce heat to low and simmer 15 minutes.
- 4 stir in spinach until wilted, 1 to 2 minutes.
- 5 season with salt (if you desire0 a ndpep per) and pepper.
