Sweet & Sour Lamb Chops With Mango

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 2
  • 1 (1/4 ounce) envelope sazon goya, seasoning
  • 2 tablespoons light soy sauce
  • 1 cup apple cider or 1 cup juice
  • 2 -4 lamb chops, about 1/2 inch
  • 2 mangoes, cubed about 1/2 inch
  • 1 (16 ounce) can whole berry cranberry sauce

Recipe

  • 1 pre-heat oven to 375deg.
  • 2 mix the first 3 ingredients in a small bowl
  • 3 pour into a baking pan large enough for the lamb chops.
  • 4 it should cover the bottom of the pan to a depth of 1/8 inch.
  • 5 if not add more cider and soy sauce.
  • 6 place lamb chops flat in pan and then turn over.
  • 7 place in oven
  • 8 then mix mango and cranberry sauce together.
  • 9 it should be about 2 parts mango to 1 part cranberries.
  • 10 bake for about 15 min then turn lamb chops over.
  • 11 bake for anouther15 minutes and turn over again.
  • 12 check to make sure lamb chops are done.
  • 13 then spoon mango mixture over chops.
  • 14 bake for another 15 minutes until mango mix is heated through.
  • 15 serve with mango mix piled on top of lamb chops.
  • 16 mango and cranberries may also be served unmixed,.
  • 17 but serve them hot.
