Sweet & Sour Lamb Chops

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 4 lamb chops (3/4 inch)
  • 1 (10 ounce) can campbell's condensed chicken broth with garlic & herbs
  • 3 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons vinegar
  • 1 (14 ounce) can unsweetened pineapple chunks, drained
  • 1 medium green pepper, cut in chunks
  • 1 medium red pepper, cut in chunks
  • 4 cups hot cooked rice

Recipe

  • 1 heat oil at medium high in large skillet.
  • 2 add chops and cook until browned.
  • 3 set chops aside.
  • 4 reduce heat to medium.
  • 5 combine broth, brown sugar, cornstarch and vinegar in skillet.
  • 6 heat to a boil, stirring often.
  • 7 add chops, pineapple and pepper chunks.
  • 8 reduce heat to medium low.
  • 9 simmer covered until chops and vegetables are cooked through - about 15 minutes stirring often.
  • 10 serve with rice.
