Sweet & Sour Lamb/chicken

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 4 garlic cloves, minced
  • 8 ounces lamb or 8 ounces chicken, cut into 1/4-in . x 2-in x 2-in pieces
  • 1/2 cup tomato, wedges
  • 1/2 small onion, sliced
  • 1/2 cup pineapple chunk
  • 1 green onion, cut into 1-inch pieces
  • 2 tablespoons cornstarch, in
  • 3 tablespoons water
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup tomato paste

Recipe

  • 1 mix the sauce ingredients in a small skillet and heat to boiling. reduce to a simmer, cook for 3 minutes and set aside. heat a large skillet and add the oil, garlic and lamb. cook for 30 seconds and add the sauce. heat to boiling, add the remaining ingredients, except the green onion and the cornstarch mixture, and cook for 2 minutes, stirring intermittently. add the green onion then stir in enough cornstarch mixture to thicken the sauce to a medium thickness. best when served with jasmine rice.
