Webb's Chicken & Dumplings

Ingredients

- 1 whole chicken
- 3 quarts water
- 1 teaspoon salt
- 3 cups self-rising flour
- 6 eggs
- 1 cup shortening
- 1/4 cup milk
Recipe
- 1 boil chicken in 3 qts.
- 2 water, with 1 teaspoons salt, until done.
- 3 remove skin and debone.
- 4 strain broth.
- 5 chop chicken, set both aside.
- 6 in large mixing bowl add flour and shortening.
- 7 mix until crumbly.
- 8 add eggs.
- 9 mix by hand until dough ball forms.
- 10 add milk a little at a time, till ball forms.
- 11 separate into 4 balls.
- 12 on floured surface roll out each ball, using enough flour to keep rolling pin from sticking.
- 13 roll out as thin as possible.
- 14 cut into 1" squares.
- 15 sprinkle with flour and using large knife scrape dumplings from surface and into floured bowl.
- 16 in 6 quart pot bring broth to a rolling boil.
- 17 add 2 or 3 drops yellow food color (optional).
- 18 begin dropping dumplings into pot a handful at a time, keeping them separated, so as not to have clumps.
- 19 stir from bottom of pot occasionally to prevent sticking.
- 20 fill the pot with dumplings.
- 21 when broth begins to thicken and most is absorbed, stir often from bottom.
- 22 cook another 10 minutes this way.
- 23 remove from burner.
- 24 add chopped chicken.
- 25 cover for 5 minutes, then ready to serve.
