Sweet And Sour Lamb By Robin Miller

Ingredients

  • Servings: 4
  • 3 cups potatoes, peeled and cubed (idaho or yukon gold)
  • 1 cup onion, chopped
  • 3 lbs lamb roast, trimmed
  • 4 garlic cloves, minced
  • 1 cup water
  • 1/2 cup ketchup
  • 3 tablespoons red wine vinegar
  • 2 tablespoons light brown sugar
  • 2 tablespoons reduced sodium soy sauce
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon ground black pepper
  • salt

Recipe

  • 1 fill the bottom of the crock pot with potatoes and onion. lay the lamb on the bed of potatoes and onion. rub garlic onto the lamb.
  • 2 mix the remaining ingredients in a separate container and pour mixture over the lamb. note: mixture should be thick enough to coat not rinse the lamb; add more ketchup to mixture if necessary.
  • 3 cook in crock pot on low for 6 to 8 hours.
