Ingredients

- 3 cups potatoes, peeled and cubed (idaho or yukon gold)
- 1 cup onion, chopped
- 3 lbs lamb roast, trimmed
- 4 garlic cloves, minced
- 1 cup water
- 1/2 cup ketchup
- 3 tablespoons red wine vinegar
- 2 tablespoons light brown sugar
- 2 tablespoons reduced sodium soy sauce
- 1 teaspoon dijon mustard
- 1/2 teaspoon ground black pepper
- salt
Recipe
- 1 fill the bottom of the crock pot with potatoes and onion. lay the lamb on the bed of potatoes and onion. rub garlic onto the lamb.
- 2 mix the remaining ingredients in a separate container and pour mixture over the lamb. note: mixture should be thick enough to coat not rinse the lamb; add more ketchup to mixture if necessary.
- 3 cook in crock pot on low for 6 to 8 hours.
