Sweet And Sour Lamb Chops

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 2 (1 inch) thick lamb rib chops
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup apple cider
  • 2 tablespoons light brown sugar
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon mustard seeds

Recipe

  • 1 in a large skillet over medium-high heat, heat the oil. add the lamb chops, sprinkle with salt and pepper, and cook for 4 minutes on each side, until browned.
  • 2 in a small mixing bowl, combine the apple cider and the brown sugar, stirring well to mix. add to the skillet, and bring to a boil. simmer, uncovered, for 5 minutes, turning chops once. transfer chops to a plate.
  • 3 add vinegar and mustard seeds to sauce in the pan and return to a boil. simmer, uncovered, for 5 minutes, stirring often to scrape up any bits from the bottom of the skillet.
  • 4 return chops to the sauce and simmer for an additional 5 minutes, until chops are heated through and sauce is slightly thickened.
  • 5 transfer chops to a serving plate and spoon glaze over the top.
