Sweet & Sour Chicken

Ingredients

- 1 (20 ounce) can pineapple chunks
- 2 boneless skinless chicken breasts
- 1 teaspoon oil
- 2 carrots, sliced
- 1 bell pepper, chunked
- 1 onion, chunked
- 1/2 cup ketchup
- 1/3 cup brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon soy sauce
- 1 teaspoon ginger
- 1 garlic clove, pressed
- salt and pepper
- hot cooked rice
Recipe
- 1 drain pineapple, reserve the juice.
- 2 cut chicken into bite size pieces and season with salt and pepper.
- 3 in a large skillet, brown chicken in oil.
- 4 reduce heat and add vegetables, cover and simmer for 5 minutes.
- 5 combine reserved pineapple juice, ketchup, brown sugar, cornstarch, soy sauce, ginger and garlic in a small bowl until blended.
- 6 stir into the skillet.
- 7 cover and simmer until vegetables are tender and sauce is thickened, about 10 minutes.
- 8 stir in pineapple and heat through.
- 9 serve with rice.
