Sweet & Sour Chicken

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 (20 ounce) can pineapple chunks
  • 2 boneless skinless chicken breasts
  • 1 teaspoon oil
  • 2 carrots, sliced
  • 1 bell pepper, chunked
  • 1 onion, chunked
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger
  • 1 garlic clove, pressed
  • salt and pepper
  • hot cooked rice

Recipe

  • 1 drain pineapple, reserve the juice.
  • 2 cut chicken into bite size pieces and season with salt and pepper.
  • 3 in a large skillet, brown chicken in oil.
  • 4 reduce heat and add vegetables, cover and simmer for 5 minutes.
  • 5 combine reserved pineapple juice, ketchup, brown sugar, cornstarch, soy sauce, ginger and garlic in a small bowl until blended.
  • 6 stir into the skillet.
  • 7 cover and simmer until vegetables are tender and sauce is thickened, about 10 minutes.
  • 8 stir in pineapple and heat through.
  • 9 serve with rice.
