Tarragon And Turkey Salad

Ingredients

- 3 cups brown rice, cooked
- 2 cups turkey breast, cooked and cubed
- 1 cup seedless grapes, halved (red or green)
- 1/2 cup red bell pepper, chopped
- 1/3 cup scallion, sliced
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 2 teaspoons tarragon leaves, dried
- 2 teaspoons spicy mustard
- 1 teaspoon sugar
Recipe
- 1 whisk the last five ingredients together.
- 2 add rice and remaining salad ingredients.
- 3 toss well.
- 4 season with salt and pepper as desired.
- 5 chill about 30 minutes before serving.
