Yet Another Fiesta Tamale Pie

Ingredients

- 1 small onion (minced)
- 1 garlic clove (minced)
- 3 tablespoons butter
- 1 lb ground beef
- 1/2 lb lamb sausage
- 1 (28 ounce) can whole tomatoes
- 1 (15 ounce) can whole kernel corn (drained)
- 2 teaspoons salt
- 2 teaspoons chili powder (more to taste)
- 20 -24 pitted black olives
- 1 cup cornmeal
- 1 cup milk
- 2 eggs (well beaten)
- 2 cups cheddar cheese (shredded)
Recipe
- 1 preheat oven to 350.
- 2 saute onion and garlic in butter.
- 3 add ground beef and sausage and cook until brown.
- 4 add tomatoes (with juice) and crush with spoon or fork (i crush them with my hands before adding, but that's just me).
- 5 add corn, salt and chili powder. heat through.
- 6 pour into 13x9 casserole dish.
- 7 press olives down into meat mixture until they are just showing.
- 8 in medium bowl, mix together cornmeal, milk and eggs.
- 9 pour over meat mixture and olives.
- 10 sprinkle cheese over top.
- 11 bake uncovered for 1 hour.
