Yet Another Fiesta Tamale Pie

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 small onion (minced)
  • 1 garlic clove (minced)
  • 3 tablespoons butter
  • 1 lb ground beef
  • 1/2 lb lamb sausage
  • 1 (28 ounce) can whole tomatoes
  • 1 (15 ounce) can whole kernel corn (drained)
  • 2 teaspoons salt
  • 2 teaspoons chili powder (more to taste)
  • 20 -24 pitted black olives
  • 1 cup cornmeal
  • 1 cup milk
  • 2 eggs (well beaten)
  • 2 cups cheddar cheese (shredded)

Recipe

  • 1 preheat oven to 350.
  • 2 saute onion and garlic in butter.
  • 3 add ground beef and sausage and cook until brown.
  • 4 add tomatoes (with juice) and crush with spoon or fork (i crush them with my hands before adding, but that's just me).
  • 5 add corn, salt and chili powder. heat through.
  • 6 pour into 13x9 casserole dish.
  • 7 press olives down into meat mixture until they are just showing.
  • 8 in medium bowl, mix together cornmeal, milk and eggs.
  • 9 pour over meat mixture and olives.
  • 10 sprinkle cheese over top.
  • 11 bake uncovered for 1 hour.
