Sweet Hot Lamb Medaillons

Total Time: 18 mins Preparation Time: 4 mins Cook Time: 14 mins

Ingredients

  • 1 lb lamb tenderloin
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon garlic powder
  • 1 teaspoon dark sesame oil
  • cooking spray
  • 1/4 cup water
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons brown sugar

Recipe

  • 1 trim fat from lamb, and cut into 1-inch thick slices.
  • 2 place slices between 2 sheets of plastic wrap and flatten to 1/2 inch thickness.
  • 3 sprinkle with pepper and garlic powder.
  • 4 heat oil in a large nonstick skillet coated w/cooking spray over medium-high heat.
  • 5 add half of lamb medaillons and cook 3 minutes on each side or until browned.
  • 6 remove lamb from skillet.
  • 7 set aside and keep warm.
  • 8 repeat procedure with remaining half of lamb medaillons.
  • 9 remove pan from heat.
  • 10 add water, soy sauce, and brown sugar.
  • 11 deglaze pan over medium heat 1 to 2 minutes or until mixture is slightly thickened.
  • 12 pour glaze over lamb.
