Sweet Hot Lamb Medaillons

Ingredients
- 1 lb lamb tenderloin
- 1/4 teaspoon crushed red pepper flakes
- 1/8 teaspoon garlic powder
- 1 teaspoon dark sesame oil
- cooking spray
- 1/4 cup water
- 2 tablespoons low sodium soy sauce
- 2 tablespoons brown sugar
Recipe
- 1 trim fat from lamb, and cut into 1-inch thick slices.
- 2 place slices between 2 sheets of plastic wrap and flatten to 1/2 inch thickness.
- 3 sprinkle with pepper and garlic powder.
- 4 heat oil in a large nonstick skillet coated w/cooking spray over medium-high heat.
- 5 add half of lamb medaillons and cook 3 minutes on each side or until browned.
- 6 remove lamb from skillet.
- 7 set aside and keep warm.
- 8 repeat procedure with remaining half of lamb medaillons.
- 9 remove pan from heat.
- 10 add water, soy sauce, and brown sugar.
- 11 deglaze pan over medium heat 1 to 2 minutes or until mixture is slightly thickened.
- 12 pour glaze over lamb.
