Spicy Pulled Lamb In Tart Cherry Sauce

Ingredients

  • Servings: 10
  • 3 lbs lamb shoulder, boneless & trimmed of visible fat
  • 1 onion, halved and sliced
  • 1/2 cup cherries, dried tart
  • 1/2 cup ketchup
  • 1/3 cup cider vinegar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons instant espresso powder
  • 1/2-1 1/2 teaspoon red pepper flakes, crushed (or 1/4 to 3/4 teaspoon cayenne)
  • 1 teaspoon cinnamon
  • 1 teaspoon garlic powder

Recipe

  • 1 place lamb and onion in slow cooker. place cherries, ketchup, vinegar, brown sugar, espresso powder, pepper flakes, cinnamon and garlic powder in a food processor or blender. pulse to coarsely chop cherries.
  • 2 pour sauce over lamb. cover and cook 8 hours on low or 4 hours on high. uncover cooker and use 2 forks to shred lamb. stir to combine with sauce. recover and keep warm. serve on sandwich rolls.
