Spicy Pulled Lamb In Tart Cherry Sauce

- 3 lbs lamb shoulder, boneless & trimmed of visible fat
- 1 onion, halved and sliced
- 1/2 cup cherries, dried tart
- 1/2 cup ketchup
- 1/3 cup cider vinegar
- 1/4 cup brown sugar, packed
- 2 tablespoons instant espresso powder
- 1/2-1 1/2 teaspoon red pepper flakes, crushed (or 1/4 to 3/4 teaspoon cayenne)
- 1 teaspoon cinnamon
- 1 teaspoon garlic powder
Recipe
- 1 place lamb and onion in slow cooker. place cherries, ketchup, vinegar, brown sugar, espresso powder, pepper flakes, cinnamon and garlic powder in a food processor or blender. pulse to coarsely chop cherries.
- 2 pour sauce over lamb. cover and cook 8 hours on low or 4 hours on high. uncover cooker and use 2 forks to shred lamb. stir to combine with sauce. recover and keep warm. serve on sandwich rolls.
