Spicy Spaghetti Squash

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 large spaghetti squash
  • 1 lb sausage
  • 5 garlic cloves, minced
  • 24 ounces crushed tomatoes
  • 24 ounces diced tomatoes
  • 1/2 cup dry red wine
  • 3 teaspoons capers
  • 3 teaspoons fresh oregano
  • 3 teaspoons fresh basil
  • 2 tablespoons crushed red pepper flakes
  • 4 tablespoons parsley, finely chopped
  • 4 green onions, finely chopped
  • 3 red onions, minced
  • 1/3 cup olive, sliced
  • 1/2 cup carrot, finely chopped
  • 3 cups sliced mushrooms
  • 4 red bell peppers

Recipe

  • 1 brown sausage and strain out.
  • 2 sauté onions in remaining grease.
  • 3 add garlic and green onions for 2 minute.
  • 4 add mushrooms till cooked down.
  • 5 add bell peppers and carrots for 3 minute.
  • 6 add meat back inches.
  • 7 add diced tomatoes then herbs then wine, cook for 1 minute.
  • 8 add crushed tomatoes then remaining ingredients.
  • 9 simmer for 30 minutes.
  • 10 add spaghetti squash.
  • 11 eat!
