Spinach Stuffed Turkey Meat Loaf

Ingredients

  • Servings: 6
  • 1 cup mushroom, coarsely chopped
  • 1/4 cup chopped onion
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 10 ounces frozen chopped spinach, thawed and well drained
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon pepper, divided
  • 1/2 cup shredded mozzarella cheese, divided (2oz)
  • 1/2 cup parmesan cheese, grated
  • 1 lb ground turkey
  • 3/4 cup uncooked quick-cooking oats
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon dried italian seasoning

Recipe

  • 1 saute mushrooms, onion, and garlic in hot oil in a large skillet until.
  • 2 tender. remove from heat; drain. stir in spinach, 1/4 ts. salt, 1/4 tsp.
