Sweet And Sour Skillet Chicken

Ingredients

  • Servings: 4
  • 2 boneless chicken breasts, 3/4lb
  • 1/4 cup chicken stock, non-fat
  • 2 stalks celery, diagonally sliced
  • 1 onion, thinly sliced
  • 1/2 red pepper, cut into strips
  • 1/2 green pepper, cut into strips
  • 1/3 cup pineapple or 1/3 cup orange juice
  • 2 tablespoons brown sugar
  • 4 teaspoons cornstarch
  • 1 tablespoon soy sauce
  • 1/2 cup pineapple chunk

Recipe

  • 1 cut chicken in strips.
  • 2 in large skillet bring chicken and chicken stock to a simmer over medium high heat.
  • 3 add celery and sweet peppers. cook, stirring often.
  • 4 mix together pineapple or orange juice, brown sugar, cornstarch and soy sauce until blended.
  • 5 stir into skillet and bring to a boil.
  • 6 cook, stirring, for about 2 minutes until glossy and thickened.
  • 7 add pineapple chunks.
  • 8 simmer for about 2 minutes or until heated through.
