Sweet And Sour Skillet Chicken

Ingredients

- 2 boneless chicken breasts, 3/4lb
- 1/4 cup chicken stock, non-fat
- 2 stalks celery, diagonally sliced
- 1 onion, thinly sliced
- 1/2 red pepper, cut into strips
- 1/2 green pepper, cut into strips
- 1/3 cup pineapple or 1/3 cup orange juice
- 2 tablespoons brown sugar
- 4 teaspoons cornstarch
- 1 tablespoon soy sauce
- 1/2 cup pineapple chunk
Recipe
- 1 cut chicken in strips.
- 2 in large skillet bring chicken and chicken stock to a simmer over medium high heat.
- 3 add celery and sweet peppers. cook, stirring often.
- 4 mix together pineapple or orange juice, brown sugar, cornstarch and soy sauce until blended.
- 5 stir into skillet and bring to a boil.
- 6 cook, stirring, for about 2 minutes until glossy and thickened.
- 7 add pineapple chunks.
- 8 simmer for about 2 minutes or until heated through.
