Weeknight Jambalaya

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 (6 ounce) boxes zatarain's jambalaya mix
  • 1 onion, chopped
  • 2 lbs smoked sausage or 2 lbs andouille sausages
  • 2 lbs chicken
  • 1/2 cup breadcrumbs

Recipe

  • 1 make rice according to package directions. set aside.
  • 2 in skillet, saute onions until soft.
  • 3 cut chicken into chunks if using skinless, boneless.
  • 4 cook with onions until lightly brown.
  • 5 add to rice and stir.
  • 6 brown sausage in skillet, mix well into rice.
  • 7 place in casserole dish.
  • 8 add layer of bread crumbs to top.
  • 9 preheat oven 350 degrees. bake for about 20 to 30 minute.
